You are correct but you didn't say why. Wet does not like to stick to wet and dry does not like to stick to dry. This is why you put (wet) meat in (dry) flour before you put it in (wet) egg (the binder) then the (dry) dredge. Alternatively you can put it back in the egg then dredge again.
Well, that’s why John is level 1. (Besides, I like it when the level 1 chefs actually act like level 1 by making mistakes, like when Emily burned her burger or when Steven put half a cheesecake into his pancake batter)
The first guy skipped dredging in flour before the egg, that's why the crumbs slid off. Shallow frying in a pan means the oil lost it's temp too quickly, which would've stewed the squid before it got crispy. Deep frying ensures a quicker cook and more tender squid. Rice flour is also great for fried squid
As someone who indulges in street calamari everyday after school back in hs, got to agree with chef taka that the tentacles were the best parts 🤤🤤 it's like all the flavor is concentrated there
to ensure if you do john recipe that the egg and bread crumbs stick to the calamari, before dredging in the eggs, dip them in flour, the eggs will stick better, and therefore the breadcrumbs too!! :)
Only recall having calamari once when I was a kid at a bar with my dad. I always liked fried shrimp and the calamari to me wasn't much different so I enjoyed it.
Level 1 chef before dredging : I don't wanna see any white anymore *proceeds to dredge all at once itstead of singulars* Ends up with barely dredged calamari
I love fried calamari, but that bag o'frozen squid rings didn't look real. It was interesting seeing the whole squid prepared. One thing nobody stressed was how quickly calamari has to be fried, ~3ish minutes in 375 degree oil. Go too long and they get rubbery.
1:09 Was the gladius ever used as a pen throughout history? Google only gave me one reddit commentor saying it isnt a great pen (mostly due to price - quality comparison).
I'd eat all three of those, but the fact that level 3 used tentacles gives him a heads up. Level 1 - the commercial breading with an excess of ingredients is something I'd usually avoid.
I love chef Taka but calling that an Aioli was wild cuz not only does he know it's mayonaise cuz he called it mayo afterwards but one of the 2 ingredients of Aioli is garlic lmao
Pretty sure there's no such things as "fresh squid" unless you live in a port city and go to the seafood market by the docks. Anything in a supermarket will have been previously frozen, same as shrimp, lobster tails, etc. So, "fresh" is not "always better", most of us are just paying the store to thaw it for us.
I think the second guy used fresh to mean unprocessed/whole squid. In a commercial sense, fresh only dictates not frozen (so for example, "fresh produce" can be picked unripe and stored for quite a while before going to market) But I get your point also
Amateur: The way my mother cooks calamari. Homecook: When you buy calamari on food stalls. Pro: I wanna eat that one, its suuper crispy looking. Obviously restaurant quality
level 1 john just needed to lightly coat the calamari in some flour before the egg mixture and it woulda turned out great
@@captainkirk4271 frozen is fine, it's consistent quality and it's convenient to keep and prep

@@captainkirk4271 pretty much all seafood is frozen at sea these days.

frank would've been here but he was busy growing his own giant squid
😂
I WAS JUST THINKING ABOUT FRANK WHEN I FIRST SAW THIS HELP
Lol. True that.
He bought all the salt in the world to put it in the water
And now, he's dealing with an incident where his how grown giant squid flipped a vessel. RUMINT has it he's also struggling to put it down.
Taka on point, the tentacles ARE the best part! Would eat a bucket of just tentacles.
What I like is that the more skilled/profesionnal the chef is, the more fresh the calmar is 😂
Ok

Oh my goodness Taka's calamari and sauce just looks so amazing I cannot
I was kinda hoping the scientist judges best taste in a blind taste test. But I’m obsessed with this series!!!
Let all of them try all the 3. This will make video more interesting.
They're definitely not all there at the same time
I'd be happy to try any of these three recipes to be honest!
Except John's of course
They are all amazing in there own way. :)
Nice to see more variety with the level 3 chefs. Wanna see lesh again!
I'd like to see 3 levels of smoked duck 😋
I’m upset we didn’t get to see Desi microwave some calamari and cheese 😂
Level 2 chef won this.
So glad to see Daniel again 😊
As someone who indulges in street calamari everyday after school back in hs, got to agree with chef taka that the tentacles were the best parts 🤤🤤 it's like all the flavor is concentrated there
we’re making calamari in class currently, this video couldn’t of come at a better time :D
Couldn't 'have', not "couldn't of".
@@bravo2966 you must be fun at parties
I'm sure all of them are really tasty 😊 Taka is a genius, honestly, yuzu mayo sounds delicious. I was glad to see Rose too
to ensure if you do john recipe that the egg and bread crumbs stick to the calamari, before dredging in the eggs, dip them in flour, the eggs will stick better, and therefore the breadcrumbs too!! :)
They all look delicious 😋
i dont know if it is alot to ask since i dont wanna come off negative or critizising but id really like to see everyone try each others dishes aswell
I was thinking the same
I keep seeing Daniel in some body wash ad on Facebook and everybody in the comments is THIRSTY lol glad we still have him here haha
Epicurious is the reason I bought a pair of those pans with contained rack! Life/culinary/game changer. I thank you so much.
I feel like the level 2 chefs are always viewing this as their ticket to the big time, so they amp up their personalities as much as possible.
They didn't bring Emiliy nor Frank because he is teaching Emily to fish her own Squid
Shout out to Rose!! She always teaches me something
Only recall having calamari once when I was a kid at a bar with my dad.
I always liked fried shrimp and the calamari to me wasn't much different so I enjoyed it.
i really wanna try all of them 🤤
All 3 looks so amazing my mouth is watering 😋😋😋😋😋
babe wake up a new 4 levels just dropped
My favorite calamari dish is linguine calamari it’s basically spaghetti with squid all over it
Add a blind taste test and you’ve got the next big cooking show.
it's been a long time for John & Daniel
Level 1 chef before dredging : I don't wanna see any white anymore *proceeds to dredge all at once itstead of singulars*
Ends up with barely dredged calamari
beautiful product
A rare video where the level 3 one actually looks best
I would eat all of them, but Daniel's looks the best
Dang it I always watch these while I'm starving
I have never tried squid, don’t know how much of a fan I would be.
I’d still try any of these.
Daniel i missed you (bc ive been busy and couldnt watch videos in a very long time)
Can you do a video on Ceviche??👀👀👀👀
can you please do 2 pro chefs swap ingredients and see which is better ?
Why i keep watching these epicurious.. Just end up hungry 😅
Would've loved to have seen someone make this Rhode Island style and throw some sliced cherry peppers in with them.
This looks delicious!!!
Level 2 chef is finnnnne!
inkling doesn't hate it loves apple slice.
I swear I just saw Daniel on a Panera Bread ad
I would do level 2... Recipe of course 😏😏
Johns back❤
Welcome back everyone!

best part is they all loved what they cooked
5:50 using what kind of juice pls? didn't catch the word
Yuzu juice.....the caption says so😅

Google only gave me one reddit commentor saying it isnt a great pen (mostly due to price - quality comparison).
John is like a 1.999999 lvl but they don’t want to make him lvl 2 because they are running out of level 1 chefs lol
Que ricas comidas, grandes cocineros.
*I REFUSE TO WATCH ANY VIDEO THAT DOESNT HAVE LORENZO IN IT*
But i love calamari so...
Se ve muy bueno
As someone who lived in New England for a long time I was disappointed not to see fried pepper rings in any of them.
This is awesome it was only a couple months ago that I commented on how cool it would be if they cooked calamari.
Thank you for another awesome video
Wait... when did Daniel level up? Congrats to him!
He’s always been lvl2, iirc.
THE LEVEL 1 CHEF SKIPPED A WHOLE STEP. ALL THE BREADCRUMBS FELL OFF 🤣
Just watched this on TikTok now I’m here
Level 2 I say would be perfect for volume level 3 if you want to impress wish I could get the exact measurements for the level 2
Hi chefs one thing is missing in Epicurious videos plz hire a judge person to taste the food and give reviews on food in my opinion it would be great
Why am I watching this while fasting
I'd eat all three of those, but the fact that level 3 used tentacles gives him a heads up. Level 1 - the commercial breading with an excess of ingredients is something I'd usually avoid.
i love john's calamari 😁he da best!
I would love Chef Taka's fried calamari with a beer
I'm surprised Daniel didn't make octopus instead!
Was that Daniel I saw on a recent Panera commercial? Or a doppelganger?
Love chef Taka!!
Level 2 won the battle 🎉
My favorite kind of Squid Game.
Me, a level 0: Goes to the frozen aisle and buys frozen calamari
YESSSS!!!! Something I've always been curious about!
I love chef Taka but calling that an Aioli was wild cuz not only does he know it's mayonaise cuz he called it mayo afterwards but one of the 2 ingredients of Aioli is garlic lmao
Ya he confused me with that I was like when did he put the garlic in???
this is a street food here in the ph and paired with vinegar❤
Level 1 and Level 2 seem pretty close to me… not sure what almond milk if it doesn’t have acidity in the marinade. Another fun video either way.
The music transported me to Sims 2
the level 1 dish was made for our self. the level 2 dish was made for family. the level 3 dish was made for customers
i dont know about logistics, but imo it would be so much better if all the chefs tasted each others food at the end instead of the food scientist
I wish they mentioned that when you fry calamari you shouldn’t be going for longer than 1:30 or you overcook it

Yay calamariiiiiii
Daniel will be known forever as the blueberry boy
To me, he's the one who brought chicken thighs to the chicken wings episode.
I eat calamari as is. It doesn't need sauce just seasoning.
I’m really disappointed that the food scientist doesn’t taste and rank them all
Please do a method mastery about herbs.
4 levels of calamari
1. deep fried
2. pan fried / sauté
3. braised
4. grilled
I’m so mad I thought they’re going to tell us who won at the end of the video
Amateur: The way my mother cooks calamari.
Homecook: When you buy calamari on food stalls.
Pro: I wanna eat that one, its suuper crispy looking. Obviously restaurant quality
I love fried calamansi 😍
Johns lemon cutting WTAF
Ugh now i want fried calamary
Honestly, the level 1 chef's calamari that isn't fully breaded on all the rings, is my preference.
Thank The Universe I love these guys and will watch anyway, because I don’t want to learn how anyone prepares or eats squid. 🙃
Frank would be here if he wasnt too busy making his own water for his squid to grow in
Daniels calamari is for me the winner.
GIMME ALL 3 :D
Can you do 4 Levels of Tiramisu?
