- Salt and Pepper Squid Recipe - Secret Method for Ultimate Crispiness!
My in depth guide on how to make salt and pepper squid (salt and chilli squid) using my 'secret weapon'. Easy to follow video and a delicious dish.
Salt and pepper squid is one of the most popular recipes that I am asked about on my channel. It's one of those dishes that looks tricky to make but in reality is very simple. Follow me as I take you step by step through every stage until you too can enjoy the marvellous crunch and flavour sensation of salt and pepper squid.
For 2-3 people you will need
300g Squid
200-300g cornflour/cornstarch
2 hot chilli peppers
5 cloves of garlic
1/2 a white onion
1 egg
1 tsp sesame oil
1 1/2 tsp salt
1/2 tsp white pepper
1 litre or enough cooking oil for deep frying

Great dish. I am not Asian but love Asian flavors so cook Asian dishes, Chinese, Thai, Vietnamese, Korean, Japanese. So much so my kids remarked we should be Chinese. Love the tip I have never heard of for extra crunchiness. I bet that tip will work well with Tempura. @@ChowWithLauyou’re welcome. Just a friendly offer of advice. It would be easier if you first shook up the squid in a bag of the corn flower. Then drop it into already whisked egg in a bigger bowl. The flower will thinly coat the squid giving the egg wash a better surface to stick to so that when you then coat the squid in the flower again, for the frying, it’ll give you a nicer coating.

About the rubberiness. For ages I struggled with this. I tried steaming them for 30 minutes before frying. IT WORKS~!! No tough squid and it's foolproof, and fries up nicely.

I live on my own, so Sunday roast always gets wasted. So I started a tradition of having authentic Chinese food instead. Yesterday I had Hong Kong style chow mein and this salt and pepper squid.
It was wonderful, really crispy and taste delicious. It really hit the spot.
I must say that next time I'm going to try it in my air frier, for if I can make it healthy, I'll have it every week. I'll let you know what it turns out like!

I think the batter needs to be changed for an air frier.
Tbh it was good, but still needed to shallow fry anyway.
So I reckon, take the calorie hit and deep fry like you recommend!!
@@P4melaMasters I’m no expert when it comes to air frying so I’m not sure how I would change the coating for that. I do like the idea of air frying for healthier recipes, it’s just that every air fryer I’ve seen advertised doesn’t look like it could cook in big enough quantities for me.
My way of finding a middle ground would be too flash fry the squid just long enough to ‘set’ the coating and then finish in a hot oven. Squid wouldn’t take very long in an oven.

Hi Lau. Came upon your great video by chance. I usually love cooking but i go through phases with a little depression which makes me feel like i lack appetite. So this lovely, easy recipe has helped to make me want to cook again. Thank you so much. I thought it was explained well and you came across as down to earth character. I am English too. @@ChowWithLau Hi well as I said I would cook it today. We just finished dinner of Salt and pepper squid. Ive got to say its the best receipe of squid Ive ever tried. Ive caught squid in Australia and looked forward to fresh squid but always felt a bit disappointed with the result. Its sometimes too chewy like rubber and or I could never get the crust right its floury or soft or too thick gluggy. oh one thing i did was tenderise it a bit with tenderising mallet because it was quite a big squid, I only used half of it. Well this was just fantastic. Resterau quality. Even my wife thought it was good and she is fussy, likes it cooked Philippino style, but she really enjoyed it too. Funnily enough, I've previously been using the water spray trick when I tried making southern fried chicken. Get the chicken wings coated with the seasoned flour, put them on a tray, then quick spray of water mist. Turn them over, another spray on the other side, then fry in oil. I suppose the water spray technique directly on seasoned flour or cornflour as demonstrated here could also work, before coating chicken pieces with it and then frying.

How many minutes do you deep fry the squid.. I am thought it would be golden colored
Hi Wanda - the squid is deep fried for about 3 mins. It's really important that we don't overcook the squid as that's why it would become tough/rubbery. And therefore the crispy coating stays quite a light colour. The same dish but using chicken, beef or pork comes out a deeper golden brown colour because they are fried for longer. Trust me though, the colour doesn't affect the taste or the crunchiness.

Thanks for your comment! Most important thing for making it crisp and not soggy is to make sure your oil is hot before you put the squid in to deep fry. The cooking takes literally a minute. And only use a little oil to toss the squid in the chilli and garlic at the end. Hope this works for you 😊
What beer/wine should go well with the squids?
I’m not an expert on alcohol but I’d recommend any cold beer that you like 😊

So was that a half onion as said or a quarter onion as shown?
Half an onion is my preference, Jim. However I had to make another batch for my son who doesn't eat spicy things so had to hold back some onion for that. To be fair anywhere in between would be fine - depends on how much you like onion. Hope that answers your question :)

What if you 'spritzed' the Cornflour with alcohol instead of water ? Wine, Beer, Vodka etc. ?
Hi John - you could try but I don’t think it would make any difference. The water spritz is to make the flour clump together and not for flavour really. And if you’re thinking of the effect of bubbles in batter mix, I don’t think this would happen here as this is a dry coating.

@@johnmajormastersawza The flavour in the coating is dominated by the saltiness and spice from the salt and chilli. If you wanted to add the alcohol I would use it to marinate the actual squid in. Obviously this would flavour the squid and not the coating but I think it would work better this way as the alcohol would just burn off if it was in the coating.

Looks very nice. When I tried before with batter, , when I fry, the skin splutter so does the oil. Will your technique prevent that? Also is your coating thick or thin? Looks a bit too thick.
Thanks Lizzy 😊 It usually splutters if water hits the oil meaning your batter hasn’t covered the squid completely. My technique doesn’t prevent that as such, you just need to coat your squid more completely. I would say my coating is about right. It’s a matter for personal preference but when I made it the coating had a very nice crunch. I would suggest that you experiment until you get it right for your liking 😊
