Took my then soon to be father-in-law to the Bali Hai for a "quick lunch and a drink" ... 300$ later and an arm full of Tiki mugs we stumbled out the place ... One of the best afternoons ive had in a long time. :)

My family started going to the Bali Hai in 1965 and we went back once a year, every year for a very long time. It's still my favorite restaurant, more for the memories and theming than the food. When we went, there was always a wait, so I got to study all the artifacts and wall maps. I'm glad they're still there after so long! I miss "Chicken of the Gods" and the lampshades on all the little table top lamps that were autographed by anyone who wanted to leave their mark. It was fun to find your message the following year! you are right though! That knife sucks! Its painful watching them cut a grapefruit with that tiny thing. A real knife halves a citrus in one clean SLICE.
The knife. That lovely ceramic knife. You must dispose of it and use a knife like the one you used a couple shows back. Your guest is awesome. You two seemed to have great repoir with one another. I enjoyed the history of the Bali Hai, it was really cool. I've been to three tiki beats at the Bali Hai, and their mai Tais are designed for one purpose, to get you drunk. I had no idea that a mai tai was supposed to taste so good, till I made the smugglers cove mai tai. But the knife though.
Absolutely one of my very favorite Breezeway shows. So much good stuff: The history of the Bali Hai (drink and place), the push for improving the drink back to its original formula, the beautiful Linda and her Imagineer stories, the chatter about favorite rides, the highlight of the Hamilton watch (the exact watch I’ve worn for twenty years)...and on and on. Loved it all. But two small questions: what about Lost Lake in Chicago (It may not be a theming tour-de-force, but the drinks are incredible, thanks to Paul McGee,...and the vibe is just right). And tell us how you figured out the ORIGINAL Bali Hai formula. Or did I miss that?
Show request idea. Can you show us The Breezeway back bar? It appears that you are definitely about quality than quantity, however my wife and I are really interested in a showing of all your mugs, glasses, barware, tools, and storage. I know it's not as cool as the front of bar presentation, however it would be cool to see. your collection and how you manage all of your equipment. We have a 16'x4' pool tiki bar we built last year and are very interested in how to mix efficiency and theming together so that nobody sees the "magic". Thanks again for all your productions. It is great to see how these classics are built in real time instead of just reading a book. - Cheers
Thanks for the idea! To be honest, most of my cocktail making stuff is located in my kitchen. I have a zillion bottles of rum and no where near the space behind the bar for them. I'll consider adding that discussion into one of the videos soon!
Watched this one sporting my new Breezeway Cocktail Hour shirt!!! And what a fun guest to have on. Very cool to hear how she set up the explorers portion in Hong Kong. And I also totally remember the Indiana Jones decoding cards.
When you posted a pic of the Mr Bali Hai mug and said "don't put these in the dishwasher", I had no idea it was YOU that put it in the dishwasher! *Spike, talk about Dumbo! And also, asking Linda if she ever met Walt Disney!* Really great episode, as always!

The current version of the Mr Bali Hai replaces the coffee liqueur with blackberry brandy. I got a rough recipe from the bartender a few years ago in “parts”. This is what I think it is now where each “part” is an ounce: 2.0 oz Pineapple Juice 2.0 oz Sweet & Sour (1 part lemon juice to 1/2 part simple syrup) 1.0 oz Blackberry Brandy 2.0 oz Light Rum .50 oz Lemon Hart 151

Had a Mr. Bali Hai last week at the Bali Hai, it was pretty good, I'll have to make it myself and compare. I can't recommend the Bali Hai, that is just pure liquor and the taste isn't great. They brag about the lack of any juice... Thanks again!

This is why metric rules. You don't need to think too hard when it comes to multiplying ratios for drinks. (3/4oz) 22.5ml X 2 = 45ml.
