- Well, I finally brought a real bartender onto Spike's Breezeway Cocktail Hour. I've know Kelly Merrell for about ten years. He's a career bartender and has been working at Disneyland's Trader Sam's since it opened. This was an interesting cocktail, don't let the length of the video scare you off. Aloha!
To make the Pearl Diver and Pearl Diver Punch, you will need:

Gold Puerto Rican Rum
Demerara Rum
Gold Jamaican Rum
One fresh Orange
One fresh Lime
Falernum
Unsalted Butter
Honey
Cinnamon-infused Sugar Syrup
Vanilla Syrup
Pimento Liqueur
Angostura Bitters

BG Reynolds makes a gardenia mix for those who don’t want to make it.
After watching Spike's BGR episode I decided to reload my orgeat and passion fruit from there - and added the gardenia mix to the order. So not long until I am making a Pearl Diver Punch!
Use ghee instead of butter, add lecithin, and stick blend to make the gardenia shelf stable and keep it from separating. I make it in bulk.
and you can can use it to make magic brownies lol

I love Kelly Merrell and miss seeing his face around Trader Sam's. Great episode Spike! Hearing both of you banter also really made me miss Tiki Oasis and watching the Hula Girls in those little cramped room parties. This little community is full of great people. Thanks for bringing them out of hiding...and bring Kelly back again, he's great!
Whenever you and Kelly can work it out, I'm sure another episode will be a hit! He had so much content to share and the rapport you two have was so fun.

Talking about looking up a recipe. I once asked for a Cuba Libre. The young bartender said he was not sure if he had all the stuff to make that before I could tell him. His partner casually stated I'll show you. The young bartender was so deflated when he made a rum and coke with lime. He look wide eyed back at his partner and hollered That's It!
TL:DR ... Gardenia Mix: 2 TBSP butter, 1oz honey, 1 tsp cinnamon syrup, 1/2 tsp vanilla syrup, 1/2 tsp Allspice Dram. Pearl Diver Punch: 3/4 gardenia mix, 3/4 lime, 1oz OJ, 1 tsp Falernum, 1,5 Gold Rum, 3/4 Demerera Rum, 1/2 Plantation Pot Stilled, blend with 6oz ice ... double strain
28:10 I have always been quite impressed with the folks at Trader Sam's, but seeing this guys level of devotion to tiki bar-tending and insight is incredible! The discussion about gimmicks that start rumors- then using that to your advantage really resonates.

Yes!!!!🤙The Bahooka⚓ in Rosemead was my favorite and first Tiki bar experience!!!!!🗿 R.I.P. Bahooka. Damn I miss that place.😔 I just drove by there on Friday, so sad man. Spike since you drink out of real vintage Tiki mugs and glasses are you worried at all of Lead poisoning??? Be careful some of that stuff from that period has been known to have Lead. Damn now I need Angostura rum??? These Tiki drinks are expensive to make.🧾 Ouch....
Super good episode! Love seeing you guys together. I sure miss seeing and chatting with Kelly at Traders. This year has got me making and appreciating tiki so much more at home but also missing the pros and bars keeping tiki alive. Hopefully we are all drinking together again soon. Cheers guys!

This is a great video, maybe your best. The guy knows what he's doing and is relatable.
First of all, I definitely need a case like Kelly's, as I truly don't have a proper case for taking my tools outside my house. Second, that story about the origins of the glass had me fooled.. I was honestly wondering why I hadn't heard that yet.

One of the best tiki bars with FX is here in Phoenix. Undertow... It's basically themed as if you're inside the hull of a ship. Little portholes let you see the ocean and the voyage. Sometimes you're attacked by pirates or come into a bay to dock. Fantastic cocktails too. They do it right.
Wow. You mentioned the Bahooka in Rosemead. I used to go there and the one in West Covina. Loved the decor. I was sad when they closed down.

Another wonderful vid, kinda great just listening the both of you talking. I don’t know if there is any truth to it but I learned in Mexico to chose limes with thinner skins for more juice.

loved this episode! FWIW I make a Gardenia Mix that tastes amazing and lasts for months. It took many attempts and experiments but most recipes out there get some fundamental principles of viscosity wrong!
getting 3/4 of juice from half a lime would make me skeptical too.
As a vegan alternate to butter, I use Coco Real... Obviously it is not exactly the same flavor, but it still very good, and will keep in the fridge for a several days/weeks without solidifying.
Kelly you will probably get a lot of Pearl Diver Punch requests when our favorite bar reopens! ;)

The rain/sprinklers thing is actually from the Molokai bar at the Mai Kai in Ft. Lauderdale. (The thunder sounds come from the valets driving over the wooden bridge by the entrance, which echoes inside.)
JM Garcia yeah, I love that at the Molokai Bar! Don was doing this same kinda thing back in the ‘40s. The Maikai wasn’t built till ‘56.

Was Kelly Merrell’s Amazon glass - glass or poly? I’m having a hard time finding the not-vintage glass and $40 for the actual glass is a bit much for me right now.
So did Kelly actually make it home that night? It looked like stories and drinks continued after the out-takes (which were hilarious).

It's not, it's just time consuming... and if you want a quick drink, who wants to spend the extra time making ingredients. 😭🤷🏻♂️

Hey Spike...BTW- Of course you must know that the phrase ' Okole Maluna' means "I Want Your Ass", right? Saying that to Kelly (or any Dude) and meaning it literally is a boldly gay statement that is a common Mahu flirt term in the islands - but totally not gay if a Dude says it to a fine Wahini.

I did not. I believe were using some that a friend had made me. I'll be making some soon! 👍🏼
