  • Vegan tacos al pastor, baby! Tacos al pastor is typical Mexican dish and one of the most known and loved street foods of Mexico City. Here we're making a vegan version with something similar to a cooked “meat” on a spit. Incisions are made all over the celery root and then it’s covered in marinade, then cooked sous vide for 2.5 hours at 85ºC. It’s then roasted in the oven and charred.

    Hey, there what temperature did you use for the over part?

      Hey John! I roasted it at 400- 450 F for 20 minutes, brushing it with the marinade every 5 minutes. or until you see that the sauce starts caramelizing and changing color from orange to medium dark brown.

      @@vegancookingmastery thank you, question/idea: if I want to include a pellet smoker in the mix would you do the oven part in there in high heat like the one you mentioned, or to increase the smoke absorption go slow. Or would you just replace the sous vide with low and slow in the bbq? (I have sous vide, just wondering if I want to get more wood flavour in it)

      @@iothomas Thats amazing! I wish I had one 😃.
      Well I would cook it first either in the barbecue, slowly until is done or in the Sous vide then I would smoke it slowly so the smoke goes in, taste after 30 minutes of smoking to check the smokiness, then decide what flavor profile you are looking for and if you want it more, keep smoking it slowly so it doesn’t get overcooked.
      Definitely try it and let me see how was it, I would love to see it.😃
