Made this dish (as I do most of them), placed it in its cooking pot on the table together with some vegetable rice - then went to the phone. Literally 4 minutes later, all but one (very small) piece was left for me, plus a few grains of rice - the rest had been devoured. I had to have a salad with mine. I guess you could call it a hit!!!!

This roasted spices blend had always been my favourite. Got it from my late mom. Love with extra cumin n coriander seeds. I'l always do extra n keep in airtight container. Used it for fried chicken too. Yr baked chicken look so yummy. It'l b on my next menu. Thank you Bumbi 💗

He brine washes dips it into boiling water then ice water a few times then finally roasts it. I think the important thing to remember is bacteria around food

Will try this for sure. I often finish off a chicken curry/casserole in the oven. I find it easier to regulate the temperature in the oven. I *always* cook chicken chasseur in the oven. Looks delicious, thank you 🙏

Your recipes are amazing and have inspired me to cook so many more Indian dishes :) a question - after you remove the lid at the 30 min mark for basting, do you put the lid back or leave it with the lid off for the rest of the cook? Wondering if you’re trying to reduce the liquid further or keep it a little saucier. Thanks!
A dish like this is perfect for when you have a day off: you prepare it, marinate it and then the next day after work, all you need to do is pop it in the oven and cook some rice.
