Oh my goodness!!! This is a wonderful recipe, thank you so much!! My husband loved it, too. I've been cooking for 45 years, I think this was one of my best meals that I made 😊 For any busy moms (or dads) who might be reading this, it's super easy to pull together and is ready quickly. I have severe polyarthritis and suffered no pain making it, but certainly benefited from the fantastic flavors! 💖😋
We always add grated onion too and make sure to marinate the chicken in a dill pickle juice or brine! It makes it super tender and juicy and adds a lot of delicious flavor to it too!
I salted the daylights out of the potatoes, which sat, salted, while I juiced the lemon, grated garlic and browned the chicken. It affected the browning, certainly didn't affect the fabulous flavor!
The genius lies in simplicity. I like dishes cooked in one pan. Especially the combination of potatoes with sausages, eggs and chicken in one pan is a great option for a quick and hearty meal. Laura, you're so Vitally.
I made it last night and it was a hit with all my guests. Will definitely make this again. I watch a lot of cooking channels but Laura, your recipes are the only ones that I try!
Laura I’ve cooked your previous lemon chicken and potatoes recipe countless times over the last five years or so for dinner company, special meals and it’s my go-to for bringing new mamas a meal. I know it by heart! And I’m lazy so I loved the former recipe- shove it in the oven for an hour or so. This new recipe while there’s no marinating does add the advantage of crispier potatoes which I have really wanted. Also russet potatoes are cheaper so that’s great! My only hesitation is I tend to use disposable roasting pans that probably won’t work on a stovetop plus I usually multiply the recipe for our family and usually give a pan to someone else. So the extra step might take some extra pans to wash…..but maybe it will be worth the extra dishwashing due to the improved delicousness/crispiness…? I’m excited to try it. Thank you Laura!
This recipe was good👍. Simple ingredients. My husband and I both enjoyed it. I swaped the potatoes for a low carb option. I used Rutabaga and it was good too. Thanks Laura.

Hey Laura, my mom made a dish very similar to yours but she only used chicken legs, sliced onions and cut potatoes in rounds and placed the potatoes on top of the chicken when it was cooked half way through in the oven… it was delicious.
