      I agree. The only pricey things Jim uses are the oil & cheeses. Those two things have to be good or the meal doesn't taste the same. Everything else is either already in our kitchens or is easy & cheap to find.

      @@dee_dee_place I'd add panchetta and guanciale to that list, but apoart from that, I agree. I mean that's the thing, you don't need fancy ingredients if you know some basic cooking tricks. Like in this video: Get a good sea on the meatr, use the oven to concentrate flavor, melt some cold butter into sauces to make them thick and glossy. It's as easy as that.

      Don't use Great Value spices. A recent study found ghat they're full of toxic things like cadmium and lead and other dangerous non-food fillers.

    Made this last night at home in Scotland. My 13 year old son came back for thirds. Great simple recipe for a single working dad. He also gave it a nine. Great work

    My mother used to make this dish, but put potatoes, garlic and peas in a roasting pan all around a whole chicken. Nothing was pre cooked. Drizzled everything with olive oil and then added her seasonings, salt, pepper and oregano. Then put it in the oven. Delicious every time. I also like your version of this and I will try it next time. You have a great kid there.

    I use to eat this dish at an Italian restaurant in the Chicago Suburbs (Gattos) and it was one of my favorites. I haven't had it since I left 6 years ago and now I get to make it at home . Thanks for the great food and your great teaching skills!

    Chicago Italian-American here. This is the real deal. One of my family's favorite recipes! I'm so glad you discovered it, and showed everyone how to make Chicken Vesuvio! Side note, some recipes don't call for peas, and some do. I actually like the peas in mine. I can only imagine what a good cook your son is going to be. Saluti.

    The easy of cooking you make with this meal is fantastic from start to finish. I agree with everyone else on the channel with having James as your taste tester. James is very good about trying to be as trustworthy as he can with his ratings. Nice work James!! The chemistry between father and son during the meal tasting is special. Really enjoy watching.     i just wanted to leave a comment because i finally tried this. I'm *not* a good cook. at all. some of the things I've done in the kitchen must never be spoken of. but this looked simple enough for me to handle and it was my wife's birthday so i wanted to do something special. there were a few mistakes made but it was still and incredible dish thanks to how simple you made it. thank you so much for your videos.

    I picked up Chicken Vesuvio at Standard Grocery in Oakbrook Illinois, I had never heard of it before. I was visiting, I am from the south. I was addicted from the very first bite. I have traveled the world., I have never seen it offered anywhere else. It is truly addicting and this recipe is easy and delicious! I give it a 10!

    Living in Chicago all my life and I loved having Chicken Vesuvio. I had no idea it was created in Chicago until about five years ago. That would explain why it is served at nearly every Italian restaurant in the area. I'm going to give your version a try at home.

    I grew up in Chicago and this was always billed as Greek Chicken...have tried making it but will check out this recipe..

      The Chicago Greek Chicken also called "Chicken Oreganato" is very similar but uses a few different ingredients.

    OMG this was so easy and amazing that my mom, who hates chicken and butter LOVED it. I anticipated that no one would eat it so I also made your chicken with garlic and mushrooms recipe and everyone loved it! I've been in a lot of pain lately so actually being able to cook a delicious and healthy meal has been challenging. Total winner on both tasty dishes and no pain flare ups!😄👍👍

    Looks delicious as always. And you've redeemed yourself with a " 9 James" rating. One tip I've seen on other shows, to prevent touching a still-hot pan handle, is to leave a kitchen towel on the handle after removing the pan from the oven.

    Just made it! I used chicken breast cut butterfly and fully cooked on the sauté all the way, also I finished the potatoes in the oven on their own. I live in Chicago and was craving it! Thank for the honest recipe, tips, timing and all! It was amazing 🤩

    This one was one my list and I made it tonight for the family - used boneless chicken thighs just as I did with the Chicken Scarpariello last week. Came out so delicious and flavorful! That braise with white wine, lemon, and chicken stock is like a magic combination for juicy tender chicken. I cooked the potato wedges in the air fryer while the chicken was in the oven. Once both were done I reduced the sauce and then served it all over the potatoes. The Chicken Scarpariello is still my top dish but this is a very close second. Thank you!

    I'm from Chicago and my mother made this dish she called a Grecian style chicken. And all the restaurants in the city though they call it chicken Vesuvio.

    This was one of the best meals I have ever tasted in my life! Even though I'm not a big fan of oregano I followed the recipe directions. None of the flavors overpowered any of the other flavors they just all meshed together. What a meal! Thanks for sharing and I'm so glad to be part of your TH-cam channel 👏🎉

    I made this for the second time last night, I’ve also made Chicken Scarp a couple of times.
    I’ve never really cooked with chicken thighs, it was always breast. I always have chicken thighs on hand now.

    I made this for my Sunday family lunch just yesterday and it was a hit. There were only enough leftovers for a snack. I'm considering trying a pork chop variation and maybe trying some other vegetables as they become available over the summer like asparagus.

    We had this most Sundays growing up in Chicago in the '50-'60's. We only knew as Italian roasted chicken. My mom added carrots and onion chunks to the potatoes.

    I made this last night and it was fantastic! The sauce was quite tart after adding the wine and lemon, but you can ignore that, it will be wonderful after adding the butter at the end. I will be making this again! Thanks a lot!

      I love it also. I don't have much counter space so I have to spread everything out on 2 counters. I prep everything & then lay it out in the order it's used in the recipe. It makes it easier than trying to figure out on what counter I have stuff.

Recently these days, it was awful and it affects my mood, hobby, mentality and emotions and I used to be like you cooking such delicacies to lift my spirit up but due to couple of bad news and yes, poverty of where I'm staying now, it's almost impossible for me to cook.     As I start stocking up on ingredients for cooking hearty food stuffs for the upcoming winter, I naturally sought you out. While I am a watered down Italian, I had no one to teach me the basics of these extremely flavorful foods. These ate real recipes for real AND regular folks and the ingredients can be bought almost anywhere. Its the technique that can NOT be found anywhere else. When I watch you, its like setting in your kitchen..chatting and learning. many many thanks and please keep doing what you do!

    Love all of your recipes. Very easy to follow with minimal ingredients. I used asparagus instead of peas (it’s what I had) still came out great. 🎉🥰

    My favorite Italian restaurant in Michigan uses chunks of garlic in their chicken parmigiana, and it is amazing. I love it that way.

    Try the Chicken vesuvio sandwich in Chicago at Ricobenes on 26th street. One of the best sandwiches in all of Chicago. While you are there get a breaded steak sandwich with giardinera. One of the best sandwiches in all of the USA.

    I thought the only people who referred to their flannel shirts as “really nice flannel” were those of us who reside in the Pacific NW. Happy to know I’m wrong. Dish looks amazing as usual.

    I am trying to decide which recipe to make first. This chicken, the roast beef sandwich, or the pasta with sun dried tomatoes, spinach, and chicken. I can smell this chicken just looking at you make it!
