Injeolmi Rice Cake in 10 minutes!

  • Injeolmi is a rice cake made with sweet rice (glutinous) flour. Soft, chewy, mildly sweet and nutty. A Korean favorite that's great for breakfast, snack and dessert.
    Ingredients
    2 cups rice flour
    2 Tbs sugar
    1 tsp sea salt
    1 1/4 cup water
    1/2 cup roasted soybean flour (Kinako)
    a sprinkling of sugar and salt for the soybean flour

    This is a Japanese sweet called "kinako mochi" that was created in Japan in the 14th century!

    This will not be soft and chewy. Pounding to stretch the cooked dough is absolutely necessary. You can use a hand mixer.

      Yes pounding is the traditional method but you will be surprised that it does come out soft and chewy even with this method!

      You can use your rice cooker steaming function or just a steamer. Steam it until it's fully cooked - prob. 20-30 min.

    YUM! thanks for the tips/details on mixing -- when I've made these in the microwave before, the directions were different and didn't explain the mixing as well (and also had the timing wrong). I'm looking forward to trying this!

    i want to make these.. can it be kept in the freezer then remicrowave for the next day??

      Yes you can freeze it and reheat in microwave or pan fry.

    hello Jinju i have a question, is the rice flour for this cake the "rice flour for mochi"? I only find the one around when Milan thanks a lot for your time.

      Yes - it's sweet sticky rice flour aka mochi flour so that's the right one!

      hm.. you can try other roasted flours or just have it without any flour or coat it with ground sesame seeds

      Hi, I'm sorry I didn't se eyour second question. Yes, you can def. steam it - that was actually the traditional way to make it. Steam it for 20-30 min and it should work!

    Can you mix it with a mixer? Will it affect the consistency?

      You can.. and if anything it will make it chewier. But it can also kind of be a mess and also if you don't have a sturdy stand mixer, it may be hard on your hands since it will bunch up in one blob and fly around. Honestly, the mixing doesn't require much effort. I have a bad wrist and I would not recommend mixing by hand if it was too much. Good luck!

    Love your recipe. Reminds me of one of the snacks in my childhood. But can I ask a silly question: If I don't have microwave, how can I cook the rice cake instead? Thanks

      Thank you! And of course, it's not a silly question at all. Microwaving is not a traditional method anyway. You can steam the rice cake in a steamer for 25-30 min. Good luck!

      OH and so you should skip all the intermediate steps, just make the dough then bunch it up with your hands then steam it.

      No sorry - it probably won’t work in the oven. You can certainly steam it though. B
