Spicy Japchae
Ingredients
8 to 9 oz Dangmyeon (Korean glass noodles) amzn.to/3HoQWjt
3 to 4 oz yubu (fried beancurd or fish cake), cut into long thin pieces
5 oz enoki mushrooms, separated by hand into bite sizes
1 small onion, sliced
2 oz carrot, julienned
1 lb soybean sprouts or beansprouts
2 oz chive, cut into 2” long pieces
1 to 2 serrano peppers, chopped (optional)
For the Sauce
2 tbsp sesame oil
3 tbsp soy sauce
3 tbsp Yondu (fermented vegetable sauce amzn.to/47NfltE) - you can substitute with oyster sauce, fish sauce, or Tsuyu
3 tbsp agave nectar or sugar
1/4 tsp black pepper
3 to 4 tbsp gochugaru (Korean red pepper flakes) amzn.to/4b78r5h
2 tbsp chopped garlic
3 green onions, chopped
For the Garnish
Sesame seeds
Sesame oil

I love korea! We can move there . I love the food so much and the beauty products! I wish i enjoy my life there before . When i stay for 4 years. I just work and stay at the house. Eat very sometimes at the restaurants.

Just made this and it's delicious :D I didn't have the bean sprouts or yuba so I just used what veggies I had on hand (purple cabbage, marinated shitake mushrooms from your normal japchae recipe, carrots, baby bella mushrooms, roasted broccoli (it beautifully soaked up the sauce). Will definitely make this with bean sprouts and yuba next time. I feel like that would add such a delicious depth to the dish. Thank you for the recipe!!

Welcome back! I love the combination of vegetables and yubu, but I can’t eat spicy food any longer because of a GI disease. So I’ll have to use my old japchae recipe but upgrade the vegetables and protein. That’s okay.
