You got that right! I watched one of those so called chefs/caterer make pot pie. Hers was dry, dry, dry! No liquid/sauce! So, those types of people certainly don't know everything. I tend to search out real, down home people like David to find what I need. And I find videos with mindless chatter too long and boring. And though I'm certainly not jealous of those who are blessed with big fancy kitchens with every piece of cooking equipment imaginable, I like kitchens that look closer to mine. And the recipes are better. Maybe because they are made from the heart. Know what I mean? Have a joyous and healthy holiday!
Hi David. I tried this recipe here in the USA a few weeks ago and it was fantastic. I made individual servings and put 8 in the freezer as I work 2nd shift and it was so easy for my husband to throw in the oven for his dinner. He is very fussy about his food and he raved about these pot pies. A few weeks have gone by and he has a craving for them so I am off to the store to get all I need to make these again.Thank you so much for posting.

I love this recipe. I used frozen mixed veggies this time and Pillsbury refrigerated dough. I only made one little pie for this evening and I'm ready for later in the week as the filling's already made for another little pie. Delicious. Perfect cold weather meal. Thank you OnePotChef!
@nothingnessx2 It is - lots of vegetables and lean chicken, plus the pastry was the "low fat" version (I picked it up by accident at the supermarket!) :P
@jspeckle7 Shortcrust Pastry and Puff Pastry usually take about the same time to cook, so it's up to you. I used Puff Pastry because I like the flakiness of it, but Shortcrust will work just as well ;)

Living in Thailand, the cost of dairy products is prohibitive, so instead of using shortbread pastry I use a pizza pastry for top and bottom, works well. Thanks for the tip on using rosemary with chicken. Love your work, you give me so many good ideas and keep it simple
@zyoshimoriz I find even picky eaters don't notice the vegetables in this one. They get distracted by the pastry and chicken! You can try it without the vegetables, but it will change the consistency ;)
@zeffman99 The pots only hold about 1 cup of chicken mixture, which is about the same amount you would get in a standard pie. Yes, you can use this filling to make normal, all-pastry pies :)
@walaowow If you mean cooking live on BlogTV - that won't happen. Too hard to set up for a live show. Plus the time difference means I'd have to do the show in the middle of the night in order to catch the majority of my viewers!
I love your recepies!! You're soo lucky, winter! We're literally melting here, its on avg 100F, but still I think this recepie coould serve us good too with a green toss salad and some yummy dressing on the side!!
@aboyname You can't make pot pies in a cup cake pan. They are designed to be served individually, which is impossible if they are cooked in a cup cake pan. You need to use ramekins or some other form of individual oven dish ;)
@wiwa116 Purple (or red) Onions are better for salads because of their color and milder flavor, while green onions are better for cooking as they have a much stronger flavor :)
@xoxoEquinebond There's a reason I do all my chopping off camera - I'm terrible at it!!! Although I can give you this tip: Wear a pair of Sunglasses while chopping onions - the onion fumes won't get in your eyes and you won't cry :)

If I can offer a suggestion: buy the take-away single serving size tin containers with cardboard tops. Cut the puff pastry to size but bake separately on a baking sheet. Make your chicken mix (or a double/triple batch!) and put into the little containers. Cool, then cap with the baked pastry, cover with the cardboard, label and freeze. When you need a dinner but don't want to put in the work, pop in the over for an hour. Voila! Dinner!

@amsani22 Sure - you can make these in a muffin pan with a pastry base. You can also do a big pie in a pie plate the same way ;)
I used "1 Cup" capacity ramekins, which is about 8 fl.oz roughly. But you can use smaller or larger ramekins if you wish ;)

@KBAFourthtime Steam can build up under the pastry lid. Eventually the pressure makes the lid explode and you end up with a big mess in the oven!

The chicken should be just about cooked by the time it goes into the oven. It will finish cooking while the pastry bakes ;)
