You just have to watch videos on TH-cam of other travelers to realize that accommodation and especially food (even in restaurants) is much cheaper than elsewhere (the prices are to be divided by two compared to France (except luxury establishments or for wealthy Bulgarians who want to pay 200 euros for an Angus Hamburger in Sofia) Tourist places are obviously a little more expensive but you just have to move a little away from a few streets... Plovdiv is just a few houses in a neighborhood which are typical, Sofia is a big city without much charm In the mountains it is BANSKO which is to visit... It is not not one country but a multitude of places to see
