  • Guam daigo' recipe is a crunchy, tangy, and sweet pickled vegetable dish that is excellent with many things rice, especially other Guam foods. CHamoru daigo recipe is easy to make needing only daikon radish, vinegar, water, sugar, salt, and hot pepper.

    INGREDIENTS
    Set 1
    1 package yellow dyed radish (available in Asian stores)
    2 tablespoons sugar
    1 cup vinegar
    1 ¾ cups water + daigo juice
    ¾ teaspoon salt
    ½ teaspoon hot pepper (dried pepper flakes will work)
    Tools: med. glass or plastic bowl

    Love your videos. My mother was from Merizo and passed away when I was 9 so I couldn’t ask her for her recipes. Thank you for all your hard work and your generosity! Your videos are beautiful!

    I love this video! I've made Chamorro pickled daigo for years for my Chamorro husband. BUT I LOVE WATCHING ALL YOUR VIDEOS ANYWAY! I always end up learning something new!

    First tried some Daigo last year on a visit to guam. I got them as a snack to have with my beer. I got mine in a plastic sandwich baggie from a small corner convenience store on “Jose S Quinata st” near the Umatac Bay Park just past the two arches. I loved them! So tasty and refreshing with a cold beverage on a hot day.

    When we lived in Agat and walked to Agat elementary we always stopped at the store to buy spicy daigo that was served in a paper cone. Best snack ever! Thank you for this recipe I can make now in the states. 💕

      Hi Juanita, I also remember when I would leave school this morning to go home to Agat. I would stop at a local convenience store on the beach side of the main road to go home. In fact, there was a little opening of a walkway to take you to the neighborhood beach. I remember walking into the store and seeing a big glass jar of yellow Daigo. I just recall asking for how many I wanted and they would put it in a sandwich bag. It looks like in present day. They are now using paper cones for the environment health, as well as the ocean health center. Now I’m reminiscing about Agat. Aaaahhh the childhood memories..

    Tumon has changed SO much. Used to be boonies and beach back in the late 50’s. I was a lucky kid to live on NAS Agana. I went to Mong Mong School.

    Love daigo and make it at home now that I'm in the mainland. I'm going to take some tips from this recipe! Favorite memory is eating it at the Santa Barbara schoo cafeteria from the snack shop. I think they had pickled papaya too and popcorn with butter and Tabasco.

    I love the pickled daikon with the chili pepper. It was my first time visiting my dad there and I used to get it from a little store in Merizo. It was my favorite to snack on and the pickled papaya.

    I love daigo. My favorite was pickled papaya. Always purchased in Mangilao at the Best Store by UoG. Love your videos. Thanks for sharing this recipe.

    I love daigo. As a kid I recall buying it from the local family store in the neighborhood after school on the way home. I’d drink the juice from the bag. 👍👍👍👍👍
    Are the sour pickle called “eba”? If so, I haven’t said that in decades 🥲

    Hi Paula, back in the late century LOL, when Daygo was sold at stores in glass jars, I am going to assume someone made it from scratch. Do you have a recipe from making it from white daikon radishes instead of the packaged yellow ones I would be interested in trying out a vintage recipe of how our elders or prior generations would make this pickle treat .

    Is the bagged daikon Japanese or Korean radishes? Is it white apple cider or white vinegar? Can I use stevia or splenda for the sugar?

      I’m not sure which country though there are multiple versions of the pickled yellow radish on the shelves…..likely from different places too. It’s white distilled vinegar. I’ve never used a sugar substitute but let me know if you try!
