I watch a couple interesting Vietnamese videos of mountain off-grid farm living, and on one of the recent ones, the mom made some thick wide noodles. Even more interesting was that using local harvested plants boiled in water, produced natural dyes that she added to the rice part of the recipe! Then she ended up with several colors of wide noodles. It was pretty cool! Took three days to make though.😂
These look delicious. My daughter got me listening to K-Pop, C-Pop and watching movies and TV shows from other countries. My nephew served over in Korea so we tried tteokbokki. We found cup bokki brand from Amazon & at first it blew our head off but we have some about 3 or 4 nights a week and it's delicious. Now I'm adding gochujaru and gochujang to everything.
I NEED to try those. Your description of the noodle texture has me absolutely hooked. They look so fantastic, I'll most certainly be on the hunt for them.
I always thought I would hate chili oil, because I really don't like spicy foods. I received ramen packets as a gift, and it came with chili oil. I thought I'd give it a try. I loved it. I think because the oil coats the tongue it made it easier to eat. I had to take a break halfway through the bowl, but it was so good.
I opt for the mild chili oil and even then, I always add it sparingly because it has just the right amount of heat for me! It goes great on sushi and beef!
you can custom your chili oil if you make them yourself. as what chili power/flakes, extra spices or ingredients you use determine what it tastes like. you can absolutely make a chill oil that has low heat but still rich in chili fragrance.
I'm sorry that you're developing sensitivity to wheat but I'm so excited about all the gluten-free stuff now! I am super interested in trying this out!

I think second one is Liangpi. And it's a cold skin noodles. You supposed to cook them, then run under cold water and mix with seasonings. The dish that popular in the summer
Hey Emmy, you should try the hack that turns rice paper into noodles! the texture is really really similar to what you're describing. For me it was a bit too chewy (and I like things to not be overcooked)

We have a local restaurant that labels food "mild is medium," "medium is HOT and hot is DEVASTATING." Interestingly, I find the "hot" noodles to be just a little hot, while my table-mates choke on "mild." Emmy, we're probably noodle twinsees. 😂
I just had some of these in last nights hot pot (like Korean barbecue, but with soup). They're really chewy and really good. You obviously don't need to have them with so much chili oil.
Anytime there's a package of oil and solid stuff like chili oil with the crisp bits and paste or the oil separated from a peanut sauce, ya gotta massage the stuff together before opening and then it'll squeeze out a lot easier!
When I put water over cups of noodles I actually put everything in a ceramic bawl that has a similar volume to those cups. I eyeball the proportions of water to noodle by what is on the plastic cup, and just translate it in my head. So I get noodles, but no cooking in plastic. It does add some dishes to wash,though.
I feel like I’ve had those thick noodles before from my usual hot pot place. They have a selection of different kinds of noodles, including vermicelli, glass noodles, ramen, buckwheat, rice cakes and stuff. But they just called this specific one “Wide Noodles” and it was thick, bouncy, and chewy but not in a rubber band resistance kind of way. So good!
I remember the super hot noodle challenges from years ago. Fun to watch Emmy sweat and win those challenges💪. I miss the days of Emmy recording in her cute kitchen.

I ate Cassava Chips coated with Mala sauce in Singapore. It was painfully spicy. I learned my baby tongue can only handle gochujang level of spiciness and nothing more.

Different instant noodles soups also come with different chili oils. Some are mild and some feel like molten metal
