    The 1st $21 Challenge video of 2024! I spend $21 and try to make 21 meals! It's a new year with new adjustments to the rules I've set for myself! Hopefully we have FUN 🙂 LIKE&SUB for more! 🧡 Feel free to post meal idea suggestions in the comments! I love to try your ideas!

    Oh while I'm commenting I want to mention my experience with currency conversion... Just converting the exchange rate doesn't always accurately reflect the buying power of that currency in its native country. Maybe US and Canada is similar enough that it works, I wouldn know about that. I'm American but have been living in Japan over a decade. Pre-covid, 100 yen was equivalent to 1 US dollar, but in recent years the value of the yen has tanked so now it's more like 150-160 yen to a dollar. But here in Japan, 100 yen still has the buying power of what a dollar would get you in the US. A bottle of coke that was 160 yen before the international value of the yen dropped still costs 160 yen now. We are a family of 4 living on one primary income from my husband's job and he earns a bit over 4 million yen a year. Previously that would've been roughly 40k USD but right now if we took his entire annual salary and exchanged it into USD it would only get us bout 22k! But we still manage to live just fine (frugally but not destitute) with 2 cars and a home mortgage on that salary. So if I use my US credit card to buy groceries here in Japan and (pretending there're no fees for international currency transactions) by the time the credit card bill would get to 21 USD being charged to my account I could probably take home about 3600 yen of groceries. However, if I went to the store here in Japan with 2100 yen of japanese cash in hand, the amount of food I'd take home would probably be similar to what I'd get for 21 dollars in the US.

      I would agree. It is more complicated than just exchange rates. In Canada our grocery prices are just higher as well but I have learned that we also have higher wages and much less to pay for other services, such as medical services than in the USA so our standard of living is very high even with the high grocery and gas prices I would say. A straight comparison of grocery prices including the exchange rate does show that the same groceries in the USA are often significantly cheaper but for some items it can be comparable. Obviously $21USD converted to $28CAD would just buy me more groceries in the challenge of course here but I suspect it would still be less than what I could buy for $21USD if I was shopping in the USA. All interesting thoughts! Thank you for your input :D

    About the garden...I say use as much as you can. If there was someone on a tight budget they would certainly use their garden food. Oh, don't forget that you can roast radishes like potatoes!

    i see a return of victory gardens and community gardens and a beginning of balcony gardens because its just getting so expensive

      I agree! I think that would be amazing. In my community we do have some community gardens and in my suburb almost everyone has a garden or a fruit tree but there could be so much more!

    Just the cost of the 3 items - Creamo, butter and cheese come to $18.66. Amazing what points can get you. I set my sister up and she still doesn’t use her points.
    My store is 100 points =$1 or you can get offered food items for less points. An example would be 300 points for a rotisserie chicken 30 oz ($7.99), milk for 200 points ($3.59), dozen eggs for 200 points ($3.99), 100 points for $3 off produce or 100 points for $3 off fresh meats.
    You have so much left over, you could include a snack for hungry days.

      Points can really add up! It seems a shame not to take advantage of them if you can :D I did end up with a fair amount left over! Life got a bit too busy to carry on that challenge unfortunately but I'll do it again eventually and hopefully plan better for a longer challenge!

    Amazing. So if you didnt have a garden, all you would have to add is lettuce, chives ( or garlic scapes), and radishes which are pretty cheap in the states and you can use the radish tops for a
    pesto. Though I've never seen ground beef that cheap in the U.S., you could get ground turkey for enchiladas.

      Even though it isn't a lot, adding those green veggies to the meals make a big difference! Feels healthier and keeps things interesting :D I think I'll have to give ground turkey a try!

    My opinion is that anything you are resourceful enough to grow yourself is free. I grow most of my garden from seeds I pull out of vegetables from the grocery store. People can grow their own food on balconies, in window boxes, even on a table or top of a dresser placed near a window.

    I would add bay leaves for soup and stews. Looking forward to this challenge. I would use the radish leaves for pesto and soup. I also like marjoram in pasta salads and soup.

    I think that you could have done a $24 per week in 2024, but using your homegrown stuff was great.

      Thank you! I think adding the produce will make the challenge much easier going forward too! I do love the challenge of only spending $1 a meal and it’s even interesting to see the different ways to keep that possible with the higher prices. Gardening is definitely a way to keep costs down!

    Thanks for giving us the challenge. Garden produce is essential when it's in season. Made strawberry lemonade concentrate today. So easy.

      I agree! None of my previous $21 challenges had so much green so early! A little bit from the garden makes everything better and it's so easy to make inexpensive food choices more interesting with the right spices! I think it's going to be a tasty challenge! :D

    You can sauté the radishes. Also, radishes are best when picked about medium to smaller in size…not so hot or dried out like the big one you showed. They can be thinly sliced and eaten on some buttered bread. If you had some pasta could make some pasta E Fagioli or garlic Parmesan sauce with pasta, spinach, some tomatoes and chicken if you have some.

    We used to eat at a restaurant that served bean soup as a free appetizer. If you got there late, there was hardly any beans left. My husband called it bean water, we used to laugh about getting there too late and getting bean water, but he liked the flavor.

    I think the spice you need is herbes de Provence or fresh Nutmeg---- I love to use fresh or dry thyme and fresh grated nutmeg in anything creamy. On the first evening when my husband were married we went to in Sacramento, CA the Crow Nest and had my favorite New England Clam chowder that had fresh thyme and fresh grated nutmeg at the table and it was wonderful. Since that I have used fresh or dried thyme and fresh grated nutmeg; I even have my own big nutmeg grater that hold the whole nutmeg in it

      HERBES DE PROVENCE
      1 tsp. fresh thyme
      1 tsp. fresh summer savory
      1/2 tsp. fresh lavendar
      1/4 tsp. fresh rosemary
      Optional: 1/4 tsp. fresh fennel. 1/4 tsp. fresh basil, 1/2 tsp. fresh oregano, and/ or 1/4 tsp. fresg sage
      Mince together. Once prepared, herbs may be used fresh or dried
      Use this easy formula as a fresh-to-dried herb converter: 1 teaspoon of dried herbs for every 1 tablespoon of fresh herbs. In other words, use three times as much fresh herbs when the recipe calls for dried and 1/3 of the amount of dried herbs when the recipe calls for fresh.

      What a wonderful memory 🧡 I have thought about nutmeg too. There are so many spices but limited space in the camper spice rack. Perhaps I need to make more spice blends rather than individual spices to free up space 🤔

      @@lorita3488 I will try to show it when I load up the camper! It's the same one that I bought in the last $21 challenge that all these small jars fit in. I just store it inside it's box that it came in when we are bumping around on the backroads :)

    I'd love to see some wild dressings using the condiments, your spices, and creativity. Or just fun sauces generally. Life can get repetitive with just bottle dressing!

      I agree! I'll have to find a balance between using up those condiments in the drawer (which are only there because I don't regularly use them lol) and finding some new interesting dressings! I did have fun making up the enchilada sauce :D

    I love soup. The bean/spinach soup looked interesting to me. The enchiladas looked good. Great job on the sauce. You were using the butter/cheese/cream so generously. Lol, I admit, I'm miserly with those big ticket items. Ha. Great job!

    Hello, I've really enjoyed several of your series, and I hate to complain, but could you please get a different sound effect for you meal counter? It is really loud and piercing and seriously hurts my head. I don't know if it bothers others, but I don't think I'll be able to watch this year if the counter noise remains the same. Thanks for your consideration.

    I would have blended part of the soup, the beans would go kind of creamy, so even without dairy you'd be off to a good start, but then coupled with the yogurt, especially if the yogurt was in with the part you blend or in before you used a immersion blender

    You can always get a hunting and fishing license and learn to forage lol..if your Walmart does Walmart cash you can always do that and save some money..it's a coupon and savings thing....btw if you don't have vinegar but you want to make a good pickle if you have any Holland house or any kind of cooking wine lying around it's a good substitute for the vinegar you can even use lemon juice and a shot of whiskey or any hard liquor but you can even make pickles with beer..I've done this before and it works 😊

      @@JessicaWanders no problem plus vinegar is made from wine anyway so cooking wines a good substitute..but even the alcohol in beer and hard liquor is good for pickling and canning as well

    I would add Paprika spice - regular, smoked or hot. my favorite is smoked paprika

    A nice seasoned salt would be a good thing to add to spices. I will always think 21CAD is cruel and unusual punishment, but at least you have spices, flour etc this time👍🏼 and the garden!

    I think for spices it looked like you didn’t have onion powder. I would say US $, any pantry staples ( like a kitchen clean out) & garden veggies.

      I do have onion powder in there :) $28 CAD would add a lot to the challenge. I have a fairly large pantry that I'm not really trying to eat down but I do have some things in the fridge and freezers that I might think about trying to use up!

      @@JessicaWanders I'm not fancy I'm a cheap skate and I actually hate soy sauce but I'm all for everything in the bottles condiments where you mix all your condiment packs together and hope to God it taste good and you don't get a stomach cramp lol ...I do that junk all the time to stretch the bottom of a condiment container as long as it's not expired lol..

    Love the content but the sound effect for each meal completion is like a faulty smoke alarm and is very grating. Need to mute the sound when I fell it's coming and then I miss parts of what your'e saying

    The boycott of Loblaws is more about their record profits, when food prices are rising. I’m trying to do Costco more as they seem the most ethical.

      @@JessicaWandersexactly. I’m boycotting Walmart instead - have you seen what they call “discounts” on their produce??? Ridiculous. They put discount stickers on crazy looking produce that is 10c less than the original price. I think people are trained to the stickers and aren’t paying attention. At least Loblaws you know it’s going to be 30% discount.

    I’m adding an extra comment because it’s easier than going back and editing my other one. for the extra space I agree with two of the above posters. Smoked paprika is amazing on so many things. I also love poultry seasoning but you mentioned that you haven’t used it a lot. Either one would be great for that last empty jar.

    Ok I'm back to finish the video! And I have a question. I can finally harvest my lettuces and have never grown any before. How do I store it so it doesn't wilt in a couple days???

      That's great Robin! I wash mine in cool & very slightly, soapy water, spin it in my lettuce spinner thingy and then pack it in plastic bags in the crisper. I try to do it as quickly as possible after I harvest it but putting it right into the fridge and washing it later works too. Just get it cool and keep it cool as fast as you can and it will last longer!

      I bake bread too infrequently for a sourdough starter to be worth the effort… but I love the taste of sourdough… so I have a “dupe” where I’ll use the whey that I strain off my yoghurt instead of the water in my dough, and I just use some instant yeast.
      It’s not sourdough but it’s similar and it’s low maintenance 😁

      @@JessicaWanders I've actually never done it but I have a recipe book on order. I think most wild yeast tastes good tho. I've never heard of anyone disliking the yeast they've caught :). You can even soak a few grapes or raisins to catch the natural yeast that forms on grape skins. Of course you would need grapes that weren't sprayed as you can only rinse them or you're lose the yeast. Perhaps it would be too much additional effort for youtube.

      @@bern84 I've done that too. It's tasty! I've seen people tuck a small chunk of raw sourdough into a container of flour to save in place of the normal wet starter. Then when they want to refresh their starter they mix the dough with water to make the thinner slurry and they have to allow it to activate for a few days before it can be used. I have yet to try this but may in the future. :)

    Raw cilantro is 🤢 cooked cilantro tho? Danggg. Cooking it kills the chemical that makes it taste soapy. Lamb karahi is a dish I am obsessed with, and I actually do extra cilantro because it’s cooked and it’s incredible that way. So I recommend cooking it in something and then see how you feel

      I put the chive flowers in a jar and add vinegar and it turns a beautiful purple-then I mix that with oil and spices for a yummy salad dressing.
