    You are amazing to beat up egg whites successfully without sugar or lemon juice. What hand mixer you are using? What speed you are using? My health wont like me to add sugar to make cake 😂

      As for the hand mixer, any brand that can whip well should work, but I personally use a Dretec hand mixer. Here's the Amazon link:

      As for the speed of the hand mixer, if the speed is too high, you might over-whip the egg whites, and if it's too low, it will take too long. So, I use a medium speed on the hand mixer.

    What else can substitude potato starch?

      I think you can use cornstarch instead of potato starch. Also, you might be able to use rice flour as a substitute, but it may not rise as much.
