How to Make Sweet Corn Pudding

- Easy & delicious sweet corn pudding recipe

Ingredients:
3 Tablespoons unsalted butter, melted
1 (15 oz) can whole kernel corn, drained
1 (15 oz) can cream style sweet corn
1/2 cup granulated sugar
pinch of salt
1/4 teaspoon vanilla extract
3 beaten eggs
1/4 cup all-purpose flour
ground cinnamon (optional)
Instructions:
1) Preheat oven to 400 degrees Fahrenheit
2) Add butter to a large microwave safe mixing bowl and heat in the microwave just until butter melts (30-45 seconds).
3) Add drained whole kernel corn, cream style sweet corn, sugar, salt, vanilla extract, and beaten eggs to the mixing bowl. Stir ingredients together until well combined.
4) Sift in the flour then stir well to incorporate.
5) Spray 8x8 glass baking dish with non-stick cooking spray. Pour corn pudding mixture into the baking dish and sprinkle the top with a little cinnamon (if desired).
6) Bake uncovered for 40-50 minutes. The corn pudding is done once the sides turn golden brown and the center has firmed up, but still jiggles a little. It will continue to firm up as it cools.
7) Remove from oven and allow corn pudding to set for 10-15 minutes before serving. Serve warm and enjoy!

Sweet corn pudding is what I grew up on. Nothing at all like the savory corn puddings/casseroles I see everywhere. Though, my grandmother used milk but no flour.
I grew up on the sweet corn pudding too! I don't remember ever trying the savory corn pudding, but I have also seen a lot of recipes for them. Maybe it just depends on the area where you grew up which style you go for. Kind of like salt or sugar in your grits 😆
This looks like a dish I can make for my Sunday evening crowd at church. It looks so good and tasty!

This is different. I'm used to corn pudding or Indian pudding with yellow cornmeal. It's a labor of love. This is gonna be so much better.

@@thehomemakingexchange I think they will taste different. Indian Corn Pudding is corn meal and a pinch salt cooked in boiling water. It takes patience.
When we were kids we would stir in syrup or a very sweet cream corn.

@@thehomemakingexchange It is a very good breakfast. Traditionally is served after supper when there was no dessert available or as a side dish to ham /smoked pork chops instead of potatoes or rice.
Old stories say the very poor folk would a large bowl of this as is (plain) when food was low. It was taught to the pilgrims by the Indians. This the name. Think salty and sweet.

Hi! I haven't tried it, but I think it would be fine if it is a granulated sugar substitute that can be used in a one-to-one ratio with regular sugar
