Stuffed Pepper Soup | Easy Dinner Recipe | Cozy Soup Recipe
Stuffed pepper soup tastes like a cross between a stuffed pepper and chili. It's an easy dinner that's perfect for cold nights.

Ingredients:
1 pound ground turkey OR ground beef
1 medium onion, diced
1 1/2 teaspoons minced garlic
2 green bell peppers, chopped
2 (15 ounce) cans tomato sauce
1 (14.5 ounce) can diced tomatoes, drained
1 (14.5 ounce) can fire roasted diced tomatoes, undrained
2 cups water
2 beef bouillon cubes (the 1/2-inch cube)
3 Tablespoons brown sugar
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
4 - 6 servings of rice, cooked separately
crackers, optional
Instructions:
1. Add ground turkey (or ground beef) and diced onions to a large pot. If you use ground turkey, add 1 teaspoon of olive oil to the pot first to help prevent sticking. Brown over medium heat until meat is cooked through and onions are softened. If you use ground beef, drain the fat after browning then return pot to heat.
2. Add minced garlic to the pot and cook for one minute, stirring constantly.
3. Add chopped bell peppers, tomato sauce, regular diced tomatoes, fire roasted diced tomatoes, water, beef bouillon cubes, brown sugar, Italian seasoning, garlic powder, salt, and pepper. Stir to combine.
4. Bring to a boil over high heat while stirring, then reduce heat to medium-low and simmer uncovered for 25 minutes, stirring occasionally.
5. While soup simmers, prepare rice in a separate pot according to package directions (I make four to six servings of rice).
6. Serve stuffed pepper soup over rice and top with crackers (optional). Enjoy!

Chocolate Chip Banana Muffins Ingredients 2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1 egg 1 cup granulated sugar 1/2 cup vegetable oil 2 Tablespoons milk 1/2 teaspoon vanilla extract 2 large overripe bananas, mashed well 1/2 cup milk chocolate chips 1/2 cup semi-sweet chocolate chips Instructions: 1. Preheat oven to 325°F. 2. In a small bowl, whisk together flour, baking soda and salt. Set bowl aside. 3. Add egg, sugar and vegetable oil to a large mixing bowl and use a spoon to mix until smooth. 4. Add the flour mixture to the wet ingredients and stir well. The mixture will be thick and crumbly. 5. Add milk, vanilla extract, mashed bananas, milk chocolate chips, and semi-sweet chocolate chips. Gently fold everything together until just incorporated. 6. Line a 12-count muffin pan with cupcake liners and spray lightly with nonstick cooking spray. Divide batter evenly into liners. 7. Bake for 25 minutes, or just until a toothpick inserted in the middle comes out clean. 8. Remove from oven and let muffins cool in the pan for 5 minutes, then carefully remove to a wire rack to finish cooling. Enjoy!

Ingredients: 1/4 cup extra virgin olive oil 4 large carrots, peeled and sliced 1 medium yellow onion, diced 3 teaspoons cumin 2 teaspoons curry powder 1/2 teaspoon Italian seasoning 2 teaspoons minced garlic 1 (14.5 oz) can fire roasted diced tomatoes, undrained 1 (15 oz) can whole kernel corn, drained 1 cup dried lentils (green or brown), sorted and rinsed 2 chicken bouillon cubes 7 cups water, divided Himalayan pink salt Black pepper Pinch of crushed red pepper flakes 10 oz. fresh spinach, washed & dried 2 Tablespoons lemon juice Instructions: 1. Add lentils to a shallow dish and spread them out in a single layer. Sort through all the lentils and disgard any stones, debris, or misshapen lentils. Rinse the lentils well, then drain and set aside. 2. Add olive oil to a large pot. Add carrots and onions & cook over medium heat for about 7 minutes, stirring occasionally, until carrots soften and onions turn translucent. 3. Measure out seasonings (cumin, curry powder, Italian seasoning, and minced garlic) into a small bowl. Once carrots and onions have softened, add seasonings to the pot and stir constantly for 1 minute. 4. Pour in the fire roasted tomatoes (undrained) and cook for 3 minutes to bring out their flavor, stirring occasionally. 5. Add corn (drained), lentils, chicken bouillon, and 6 cups of water. Season generously with Himalayan pink salt and black pepper, then add a pinch of crushed red pepper flakes. Stir it all up, then raise heat to high and bring ingredients to a rolling boil. 6. Cover the pot and drop the heat back down to medium. Cook for 50-60 minutes, stirring occasionally, until lentils are cooked through and softened. Stir more frequently after 40 minutes have passed, to help prevent sticking. 7. Add fresh spinach and stir continuously for about 1 minute, or just until the spinach has wilted. 8. Remove pot from heat, add an additional 1 cup of water for a thinner consistency (if desired), then stir in the lemon juice. Taste and adjust salt & pepper according to your preference. Optionally, for enhanced flavor, let soup sit in pot for 30 minutes before serving. Serve soup warm and enjoy!

Ingredients: 3 Tablespoons unsalted butter 2 Tablespoons granulated sugar 1 teaspoon vanilla extract 1 ripe banana, medium size 1/2 cup all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon ground cinnamon 1/8 teaspoon salt 1/3 cup milk optional toppings: whipped cream, banana slices, chopped walnuts Instructions: 1. Add butter to a cereal sized, microwave-safe bowl. Heat in microwave just until butter melts (around 30 seconds). 2. Add sugar and vanilla extract. Stir until well combined. 3. Use a fork to mash the banana into the mixture until smooth. 4. In a separate bowl, mix together flour, baking powder, cinnamon and salt. Then, sprinkle dry ingredients evenly over wet ingredients. 5. Add milk & mix until everything is well combined and large lumps are gone. 6. Clean batter from the edges of bowl, then microwave on full power for 2 - 2.5 minutes, or just until toothpick inserted in middle comes out clean. Cooking time may differ based on strength of your microwave. Check frequently & do not overcook. 7. Allow cake to cool a little, then add toppings and enjoy!

The measurents are in the description box, I'll put the recipe here too: Ingredients: 3 Tablespoons unsalted butter, melted 1 (15 oz) can whole kernel corn, drained 1 (15 oz) can cream style sweet corn 1/2 cup granulated sugar pinch of salt 1/4 teaspoon vanilla extract 3 beaten eggs 1/4 cup all-purpose flour ground cinnamon (optional) Instructions: 1) Preheat oven to 400 degrees Fahrenheit 2) Add butter to a large microwave safe mixing bowl and heat in the microwave just until butter melts (30-45 seconds). 3) Add drained whole kernel corn, cream style sweet corn, sugar, salt, vanilla extract, and beaten eggs to the mixing bowl. Stir ingredients together until well combined. 4) Sift in the flour then stir well to incorporate. 5) Spray 8x8 glass baking dish with non-stick cooking spray. Pour corn pudding mixture into the baking dish and sprinkle the top with a little cinnamon (if desired). 6) Bake uncovered for 40-50 minutes. The corn pudding is done once the sides turn golden brown and the center has firmed up, but still jiggles a little. It will continue to firm up as it cools. 7) Remove from oven and allow corn pudding to set for 10-15 minutes before serving. Serve warm and enjoy!

Hello Dianne... I watched your video.. Nice ! I make the same recipe was given to me ( 25 years ago) but I do use salted butter but no need to add extra .to it ..I have used pudding and heavy cream together but not for my cream.pound cake .....I use lemon juice but just a tablespoon only I add a total of 4 flavors to back up cream cheese batter ..gives it a taste you would enjoy my house special... I bake for hour 10 minutes.. Make a glaze with lemon juice... I make 10 other different kinds I do add baking powder stir with my sifted flour .. FYI .. always add your flavors at the beginning of butter sugar the flavors will flow thru out batter evenly instead of the end I was guilty of it ( middle of recipe ) I learned from another baker Mrs Donna watch her channel too I learned a lot from her over the past year or so even did a few of her recipes but I did my own twists turns too 😂.... Ingredients: 2 Tablespoons milk 1 cup frozen strawberries 1 frozen large banana 1 1/2 cups vanilla ice cream 1/2 teaspoon vanilla extract whipped cream (optional for topping) Instructions: 1. Add milk, frozen strawberries, frozen banana, vanilla ice cream and vanilla extract to a high powered blender. Blend until ingredients are well combined, scraping down blender as needed. Milkshake should be smooth and thick. Note: The milkshake may take a while to blend because of the thickness. If you prefer a thinner milkshake, add a little more milk. 2. Pour into glass and top with whipped cream if desired. Serve immediately. Recipe makes around 20 oz. mikshake
