So cane sugar, when you extract it from the cane is a brown sugar. Molasses is what is left over when you turn brown sugar into white sugar (it is the brown). It's vaguely sweet with its own flavor. It was mostly used as the basis for making rum, but it's also a cheap alternative to sugar for poor folks back in the day.

      Don't talk like you know.
Blackstrap molasses is different than regular molasses it's more concentrated.
It's boiled three times over, has a much stronger flavor and taste almost like barbecue sauce or balsamic vinegar it's not sweet at all.

Molasses by itself isn't a particularly good flavor, but it blends well with other things, adding a mild sweetness to whatever you add it to, without becoming overpowering. Molasses and tomato to sweeten baked beans. Molasses and ginger makes yummy cookies. You can add a little to spaghetti sauce, goulash, or chilli.

When I read the title, I thought it was going to be 100 year old candy! LOL!! That sounds crazy, but it's Ashleigh! I agree with her about molasses. Molasses is very hit or miss; if you're going old-timey sweet, I go with honey.

"Ye Old Candy Company".. should be prounced 'The Old Candy Company'. The Ye is a relic of Middle English. When the alphabet was shortened, The letter that resembled a Y, but had sound of TH was dropped. So they used the Y in its place. Now it's a misunderstood nostalgia thing..

The chalky bit is glucose powder used to stop the sweet/candy from sticking to things, Black Jack isn't liquorice, we have both of these sweets in the U.K. I think that I should send you some classic British sweets (candies) to try, not the ones that you did two years ago though.

I wonder if the blackjack is similar to bonfire toffee in the uk? Also black jacks in the uk are aniseed (not liquorice as people think) flavoured chews. I love both because I’m a monster 😁

They use to take tiny little bites to make the candy last as long as it could, so a strong peppermint would be a delight... from what I recall It feels cool in your mouth and just dissolves on the tongue.

Ashley blackjack is made from sap that comes from a tree what else were you expecting. it is boiled to the hard crack stage so it crystallizes and probably turns bitter that's all it is boiled sap candy is kind of sweet because some sap is kinda of sweet that's where Maple syrup comes from. molasses is another form of sap it's darker and it's a little bitter so if you don't like syrup you probably wouldn't like blackjacks it's an acquired taste really because there are no additives to it comes straight from the tree gets boiled and rolled out and then you go sticks of molasses candy.

Hey, I live like half a mile from Ye Olde Pepper Candy Companie. It's very small, and this time of year, is pure chaos
I'm not native, but I've lived in Salem for a few decades, now. It's a beautiful old town. The Witch Trials are interesting (and if you can can get past all the fun, spooky stuff), and are a tragic reminder of what happens when you put greedy people in charge of a fearful community. But Salem also has a long nautical history; riches and good from throughout the world came and left the ports here.
The city as a whole is car-unfriendly, but the downtown is very walkable. My recommendations: Between May and August are the easiest times to visit. Everything should be open and, if there are lines, they'll be short. It gets progressively more crowded, and by September it can be difficult to do the things you'd like. Now, I'm going to break with the usual advice of avoiding during October, especially the last week or two. If you now exactly what you are getting yourself into, it is really fun. Halloween day is amazing, but you have to plan way ahead, and you're going to miss out on quite a few things.
If you come at a more reasonable time of year, I recommend visiting for two days, and dedicate the bulk of one of them to the Peabody Essex Museum

Sadly, can't be bought online. They don't list them as an option in the Pepper Candy store, and the only other place that seems to offer them is out of stock of all flavors. The original store does mention you can call them directly and ask if a special shipment can be arranged, but...I think I'll just wait for Christmas and settle for the chalky mint balls. Although I really wanted to try the lemon flavored Gibraltars!

I mix soft butter & molasses together for biscuits. Blackstrap is the strong flavored stuff. Are you sure your grandfather uses blackstrap, and not another type of molasses? Molasses has twice the sugar content of blackstrap, plus a milder flavor. Sugar is not added. They're all made from boiled down juice from sugar cane. The odd flavors you're detecting are the concentrated minerals and vitamins.
