How to make chocolate coffee cake / Opera Cake Recipe / Mocha Cake

Hello~~
I'm Boone Bake.
Today, I made an opera cake, a chocolate mocha coffee cake full of coffee flavor.
The blend of almond biscuits, dark chocolate ganache and coffee cream was so good.
I've made coffee cream with an angle glaze~
It was so delicious.
And when I applied chocolate coating on the bottom one more time, the cross section was prettier.

(15cm*5cm* 4pcs)
●Coffee syrup
6g instant coffee
45g sugar
130g hot water
3ml vanilla extract
8g Kahlua
● Dark Chocolate Ganache
75g heavy cream
100g dark chocolate
25g unsalted butter
● Almond Bisque Joconde (Sponge Cake)
110g almond powder
30g cake flour
100g sugar powder
3 eggs
3ml vanilla extract
3 egg whites
50g sugar
20g melted butter
● Coffee butter cream
* Coffee concentrate
5g instant coffee
5g hot water
5g Kahlua
1ml vanilla extract
3 yolk
65g sugar
105 g milk
180g unsalted butter
● Chocolate on the bottom
50g dark chocolate
5g vegetable oil
● Dark Chocolate Glaze
100g dark chocolate
15g vegetable oil
Raspberry honey
corn syrup
