Made this tonight, thanks for sharing Chef! I found a easy and fast way (on youtube) to "peel" the pearl onion....cut the root side off each pearl. The put them in a pot of boiling water for 2 minutes. Take them out the pot and let cool for like 2 minutes. Then get a bowl to catch the pearls..hold the onion at the uncut end and squeeze! And out pops the onion (from the root area u cut off)!!! Super easy.
I state this every video here, Pasquale is the best Italian chef on you tube followed by a close 2nd tie between Lidia Bistanich & Nick stellino. This is an outstanding , flavorful recipe, delicious. God bless Pasquale !

Just made this today for family. Everybody loved it it was outstanding. The skin was absolutely crisp the chicken was moist and succulent potatoes and pearl onions that soak for a while in the olive oil salt pepper & Thyme was excellent. Under 25 bucks for everything including fresh chicken from my local butcher and fresh thyme fed a total of 6 people. I'll be making this again

I bought the chicken and the patatos and onions I forgot fresh peas. But I will add carrots and mushrooms so tomorrow I will go buy peas if I make enough tips at work and I will cook this as soon as I can. You have taken my Italian cooking to another level. To jazz it up a bit, I tossed in a handful of lightly sauteed pinenuts and used fresh Italian parsley for garnish. Totally delicious meal and a beautiful presentation. Great recipe, made it once, did not like the peas or small onions. , so I improvised, I used a good sweet onion sliced thick, I subbed just some capers for the peas and added some sliced red peppers.
Looks good! I made it and added porcini mushrooms also I dipped the chicken in seasoned flour before frying. I also added chicken broth and butter towards the end. It made a nice sauce. 😊
