I started cooking when I was very young. I just stumbled upon his videos now and am going to share them with my father who is 65 and taught me everything tomorrow. When I worked as a busboy at LaRosa in Skokie, Illinois, Chef Louie would make this for the staff. He was a big heavy set Italian. Chicken Vesuvio is of course not Italian but apparently has always come from Chicago. Watching this natural chef cook this beautiful dish brought back great memories. I love when he went to taste it for seasonings and there was absolutely nothing that needed to be done. Beautiful beautiful.

At first I was taken aback by the dirty kitchen, worn out pots, and lack of personal cleanliness. But the guy is so charming and so lovable, all of the negatives fall away quickly.
I miss Jack and his humor. I came across him and I watched as many as I could. He loved cooking and you could tell he loved people. I Retired from Law Enforcement in 2002 and wanted to go to cooking school. Couldn’t believe the tuition fees. It was a slap in the gut when I learned this gracious, humble, and heart of a giant had passed away. He always talked about his girls. They were right, the restaurant wouldn’t have been the same without his presence. RIP Jack.
So i Gotta say... When i got "Soberish" back in 2016 i was looking for something to fill the time. I came across this man. Figured we were kindred spirits, I could tell this man had a hard go at life. And What an amazing chef he was. So I Myself started cooking and loved how he cooked. Didnt tell you exactly what he put into everything in the comments he just cooked and made you write down everything. I just adored him and my wife did as well and it was amazing trying to cook like him. I'm still cooking today in 2023. RIP BIG MAN! I still get all my recipes from the legend. I was in New London before he died and had watched his cooking for years and didn't realize that's where his spot was. I shed a tear that I never met the man. 😢 RIP. He was such a wholesome, amazing man.
It's not just the wonderful food that Big Jack makes when cooking but he reminds me of my parents saving everything that went into every dish. Big Jack brings so much value that many take for granted.
I like how he uses a short chef knife as his do all. It mimics a small deboning knife at times and he's able to use it for everything. No posturing. Form follows function as it were.
The BEST PART of Daddy Jacks. Cooking is watching HIM EAT . the excitement builds when it is headed to his mouth. I just happened upon this channel this morning, never heard of him. The other video I watched was of him mom's chicken ala king, and I thought how weird that there is a restaurant in CT named Daddy Jack's and thought how could it be that Dallas had a restaurant of the same name. I thought it was odd that the interior while them sitting at the bar looked similar to the Dallas location, so I looked him up. Low and behold, the same guy. In '93 I moved to the M-Street area off Lower Greenville Avenue in Big D where Daddy Jacks was located. I had heard of the restaurant for years and decided to give it a try. It was fabulous, i was really sad when the restaurant closed.
I did make this ! Wow Delicious! Ended up making it a few times last winter ! And will be cooking it for my parents again soon ! I love the it ! RIP DADDY JACK ! YOU WERE THE BEST EVER

Just made this one tonight with some chicken legs that needed cooked. It was fantastic. The Red bell pepper really made it for me. I also added a handful of baby carrots for extra color. One day I'll remember the green onion!

I just happened upon this channel this morning, never heard of him. The other video I watched was of him mom's chicken ala king, and I thought how weird that there is a restaurant in CT named Daddy Jack's and thought how could it be that Dallas had a restaurant of the same name. I thought it was odd that the interior while them sitting at the bar looked similar to the Dallas location, so I looked him up. Low and behold, the same guy. In '93 I moved to the M-Street area off Lower Greenville Avenue in Big D where Daddy Jacks was located. I had heard of the restaurant for years and decided to give it a try. It was fabulous, i was really sad when the restaurant closed.

Just made this one tonight with some chicken legs that needed cooked. It was fantastic. The Red bell pepper really made it for me. I also added a handful of baby carrots for extra color. One day I'll remember the green onion!

I just recently lost my brother (57 years old) who lived his life always enjoying food and the many different ways in which he would meld together ingredients.
