I fucking knew it, I knew I'm not crazy! Their hitboxes appear slightly before attacks actually land. Notice how his hitbox appears much earlier during his grab attack, that's why It always felt like I was grabbed before it actually hit me.
Maybe I'm seeing it wrong, but the hitbox only appears after he launches to grab you (6:12). It shouldn't get you if you dodge at the last moment and towards the beast. I think the biggest issue with the fight is the camera rather than the hit boxes
Then you clearly wasn't pay attention, go to 1.06 and look this attack at 0.5 speed. The boss model is already huge and hitbox are very clearly bigger than the model, if the last move in particular seems like a fair hitbox to you I don't know what you consider unfair
The lightning phase perfectly shows how unreasonable it is and why it's 30 seconds of "do nothing but avoid projectiles until next phase". Only bad design of this boss, the lightning phase spams way too much stuff it compleatly stops the fight.

For such a large boss, they are surprisingly good.

Agreed, ranged attacks works better for this boss in the lighting phase, otherwise is very difficult to land an attack
