    I just made this recipe! It is so good! I just made toast out of it which is delicious too. I cannot thank you enough for making this video plus sharing the recipe. My first time to make baking goods in grams. I'm sold. Your recipe came out perfect. I did not have a probe so I went by the thump on the nicely browned top. Heard the hollow sound and knew it was time to remove it. I have had problems with probes or thermometers working correctly. Thank you!!

      Thanks for your comment! We are so happy you now have a bread you love!! You did great by thumping the bread to test for doneness and now you know the time your oven takes to bake it so you will never need a probe.

    Looking forward to trying your bread recipe - looks great! (just got a biopsy to confirm celiac!)
    A couple of questions if I may.
    (1) Is there a big difference between Instant versus active yeast? I know you say NOT to use instant, that is what O normally have used with great success in baking regular wheat bread over the years - I'll go get active if it is really important!
    (2) Is Garbanzo flour not the same as Chickpea flour? When I look on Amazon, Garbanzo flour seems a lot more expensive - no idea why if they are the same?!

      Yes, big difference between the two yeasts and you will want to use active, not instant. Yes, garbanzo and chickpea are the same flour and I am not sure why they are different prices. Let me know how you like the bread!

    This recipe sounds great but I can not have SOY or EGGS!! Any help for me?

      Yes! Use a vegan mayo and coconut aminos seasoning which is soy free. You may need to use less or more so feel free to experiment.

    If you were going to use sourdough starter, how much would you use instead of the yeast?

      Thanks for your comment. I would not use this recipe with sourdough starter. It was designed to work exactly as created and I have not idea what sourdough starter would do the end result.

      I have not tried millet in this recipe. The flour blend is formulated for the best result both in flavor and baking.

      Thanks for your comment. Is indeed gluten-free, completely and without question. It does, however, contain ingredients that are not suitable for your food restrictions.

      Yes, milk powder will work perfectly. I use the Soy Milk Powder because I am dairy free.

      Yes it is complicated but yields a superior loaf of bread. However, once you make a couple of times, it becomes easy.

    Hi, does this bread spike blood sugar levels?

      The sugar is food for the yeast and the honey amount is minimal so this is not a sweet bread. I am not sure how it affects blood sugar levels, though. Thanks for your question.

    Hello! I know this video is two years old but hopefully you will see this! I made this recipe today and the bread turned out nice and soft. The only problem I had was that in some areas of the bread was a little gummy. I mixed the ingredients exactly as written as well as I followed along with the video. My batter was a little more runnier than yours and I felt that the 2.75 was too much liquid, after I had mixed it, I know that the weather as well as the environment can be a factor. I also had to bake it longer. Do you suggest I reduce the amount of liquid? If so, by how much? Is it possible to half the ingredients to make one loaf instead of two, until I can perfect this recipe? Gluten free baking is really hard, but I’m gone hang in there!

      Thanks for your comment! Sounds like you did an amazing job! Yes, it takes some trail and error and you are so close! Try 1/4 cup less water next time and also make sure to temp the bread to 200 or 201 to make sure the center is baked through. And yes you can half the ingredients for one loaf.     The indentations on store bought bread is from a Pullman bread pan with a lid that prevents the use of plastic wrap as well as produces a taller lighter bread.

      Thanks for your comments. Commercial gluten-free bread is not made in Pullman pans. Nor does the plastic wrap inhibit the rise of the bread.

      Deb, if you can tolerate dairy, replace the soy milk powder with milk powder. It should replace quite nicely.
