What I would do is first verify that your bike has connecting rods which are slotted top and bottom. Some do, some don't, depending on the bike and its history. If it has non-slotted rods, I would endeavor to the full extent possible to preserve the oil injection system. You could probably get away with mix on non-slotted rods, but "getting away with" something is never ideal. If the rods are slotted, then I would simply remove the oil pump assembly, plug the three banjo ports under the carbs with properly fitting bolts and GOOD sealing washers, and then you should be good to go. Expect to use more oil and make more smoke in order to match the lubrication capability of the injection system, especially on the H-series.
