All these years I’ve been trying to melt chocolate chips! Maybe that’s why I found it so difficult. I never knew that chocolate chips were designed not to melt. Thanks!
Thank you for this. I always thought that you had to have a tempered glass bowl and sit it over the sauce pan to act as a double boiler. This method is very easy and convenient! Thank you.
If you want to melt chocolate in the microwave, you have to do it in intervals of 30seconds and not more than that . Every time you put in microwave, it has to be no more than 30 minutes and check out consistencies until you get to the consistencies you want. Hope that helps.
Thank you so much for this video! I tried melting chocolate chips in the microwave in 30 second intervals however, it came out lumpy and chunky. I decided to look it up on TH-cam and came across your video. I bought some baking chocolate and melted it as in your tutorial on the stove and it came out perfect.
5:01 Thanks for sharing this. I was able to successfully melt chocolate without it seizing. At first I was worried that it wasn't melting as fast as it should and had considered melting it with the skillet of water back on the stove. But then the chocolate began to melt steadily and I was able to have that luscious shiny melted chocolate.
I have never melted chocolate before and this method worked perfectly 😊. Also good to know chocolate chips aren't designed to melt. Glad I saw this before buying the chocolate! TY
Brilliant. Clear. Explained why. Easy. Never done it before. Looks great. I put some orange oil in. It may not set 'crisp', but some softness to the chocolate woukd be great . Thank you. Good job.
I'm so glad I found this video, learning about the water/wetness is so important! My melting turned out perfectly thanks to that info, waiting to see how the final product comes out of the oven. Thank you.
Paranormal Lover228 Ikr? I've used chocolate chips/drops/buttons and they all produced the same result lol u just need more chips since they're little tiny pieces. This lady doesn't know, does she think chocolate chips don't melt in cookies 🙄
You did an amazing job of explaining everything. Thank you so much for making my first time easy. I needed this to melt choclate for valuntines day balloon bowl and heart shaped molds. It turned out so perfect thanks to your help and guidance.
This is not a double boiler. Your pot has direct contact with your pan, even though you have water around it, this is still just cooking a pot on the stove normally with some extra metal between. A double boiler needs the pot to nestle above the boiling water and the apparatus holding the boiling water needs to be able to direct it upwards with high walls, preferably a snug contact so the steam goes directly onto the nestled pot above. The heat distribution and consistency is different. Your video was neat. Thank you for taking the time to post.
Great video! This is the first time seeing a wide skillet used as a double boiler so intuitive and resourceful. I won't have to waste more money on kitchenware :D
Thank you for your effort, easily and clearly explained. I have two questions please: If I put it on the top of a cake, would it harden? If I put it in the middle of a vanilla cake, like vanilla layer then chocolate layer then vanilla layer and back it, would it be still running what I cut a piece? Thank you from heart in advance for your reply and help. Best wishes.
Thank you so much for your video as it helped me a lot for melting the chocolate as today is my Son's birthday and suddenly I wasn't able to melt the chocolate it was becoming hard but... By seeing your video my work is done and I have done the decorations of my cake 🎂
Wow this is an awesome and innovative recipe.. Ur tips of using dry utensils is so important. Can you please tell us what brand chocolates you use. Is there a video on it. Or on chocolate ganache in your channel..
So cool aunty . I whatched it cause I am a 5th standard girl is making a home made cake for my mom and dad . So I need to know how to melt chocolate. Thank you for this video aunty . You are the best cook in the world.
Thank you for the tips..., i neva knew that liquid make the sause crumbly. I always used some milk and my chocolate melt was never a success. Im going to use your method. .NO MOISTURE. thank u again. Your tutorial was extremely beneficial for me..
I used to do the mistake of using milk from fridge in melted chocolate to make it thin. But the choc would immediately seize. Chocolate is temperature sensitive. Guess milk should be warm n then added.. Or added at the beginning with chocolate
Mam , thankyou soooooo muchhh After watching ur vedio ,I can easily melt compound chocolate which I can't do by double boiling method,,,, thanks a lot mam,,,, kept it up,,,,love you
Hi ma'am ...which type of chocolate should I use to make cake decorations? I have compound chocolate with me . Can I melt it the same way as shown in d above video? And if I can use compound chocolate, will it melt after I create the decorations? Thanks...
Thank you so much for this video. It was really easy the one doing in the double-boiler. My mom's birthday cake came out wonderfully. Actually, even I won't boast but but a beginner like me did wonderfully.
Thnku so much..really really ,a very helpful video..excellent information...i dont hv glass bowl, and ubhv not used tht,ur video is easy, informative.thnxvery quik very easy...kuch sec.mei hi chocolate melt ho gai..maine chotte pieces mei cut kia th...aur taste to aur bhi acha laga .😊😋😃😄
This is a great video... helped me a lot... thanks... I needed to melt chocolate for making chocolate bowls using balloons.. :D God Bless You Ma'am..!!!
It was really a nightmare... Like i started melting the cadbury, my water was boiling... Once, like after 30sec or so, it became nicely melted... i went to bring the butter from the fridge to mix with it. And when i went, i had turned off my flame... when i returned, it was hardened... Now this time, it became so hard that it was not even getting melted in direct contact with the boiling water(i directly dipped my saucepan into the water)... I think i created that 'lumpy mass' which u were talking about... But hey, whats the science behind it? Why the melting point became so high this time? And why even this chocolate became hardened?
People have been using Nestle's chocolate chips for melting in tons of recipes for many many years. Same method to melt, slow with pan of water like that. Add eagle brand milk with nuts and jogi berries for easy great fast fudge. Pour into glass or any small square container and put in fridge until firm.
I love this I ordered a Chocolate Fountain but I don't have vegetable oil and I don't want to microwave it because it will still have big chunks but this wil help💖
Thank you for sharing your talent My question is can I use coca butter ( baker’s) cooking chocolate 🍫 For chocolate for dripping on cake Waiting for your reply 😊
Hi i've try it several times and it keeps coming out crumbs, either microwave or stove. I do hope with your tips that i will succeed. I love baking and experiment. I'm from Namibia ❤🎉
You can melt chocolate chips. The best way to melt chocolate chips is to put them in a plastic bowl and keep re-heating until how you want it. I just did it and it came out really good. I started off with 15 sec, 20 sec, then 45 sec and it melted. Do not use a glass bowl.
I will. I bought a big bag of Belgian chocolate which is designed for cooking. On its own, it is quite bitter, so needs some butter and sugar added. I have experimented, creating an ugly mass lump which was actually quite tasty. Research, research, research. I intend to master this skill and hope to create some chocolate covered fruits or similar.
HELP!!! I have a 2 cup tempered glass measuring cup full of chunks of white chocolate, and milk chocolate, and dark chocolate candy bars and some nestle chocolate chips as well. I am thinking of putting it all in the oven together to melt it evenly before stirring it all together very well and pouring it into a pan to make thin bars of whatever it makes. Questions: #1. Is this a bad idea? #2. Is it safe to put the tempered glass measuring cup in the oven? #3. How hot should I make the oven and for how long should I heat the chocolate? #4. What kind of non-stick spray should I spray on the pan I am pouring the chocolate into. It is a “non-stick” “copper coated” pan, but I know from experience they are not really non-stick. That is a lie they tell to sell them.
Hi, when i use bouble boiler some times chocolate get messed from bottom side, its not smooth when i put it in refrigerator it looks smooth but after wards u see some lines or hole in it.plzz tell me where i do wrong curious to know about my fault.plzz reply.
+Cakes And More how can we identify which chocolate to use for melting? I used Cadbury Bournville dark chocolate bars once and they seized up. The taste of the chocolate changed too.
Thank you for this informative video! I have a question and I was thinking you could perhaps answer it for me. I have a recipe to make eclairs from a cookbook called The Cardamom Trail. It's a great book, but the part about the melted chocolate went wrong both times because I did it directly on the saucepan/heat (it turned into a block). Now I will do it from the method from this video since that's the proper way. The book's recipe is for a caramel chocolate sauce. It says to melt dark brown sugar with butter first (having it come to a boil and then stirring for 1 minute) and then add in dark chocolate and some heavy cream. Would it come out ok with those ingredients if I did it in this method? Could you also tell me what effects sugar, butter, and heavy cream have on melted chocolate. Sorry for the long message. I hope I made sense :-) Thanks again!
Thank you for watching my video Lisa! You generally need to be very careful when you are melting chocolate on its own / chocolate and butter together, whatever method you use. But when there is liquid to be used along with it - like milk, cream or water, it is much easier. I don't think you need to use the method in the video for this sauce. You could try heating together the butter(soft), brown sugar and cream till it begins to steam. Take off the heat and stir in the chopped chocolate till it melts. That should work.Generally, any temperature variation causes the chocolate to seize up. So do not add cold cream to melted chocolate. Chocolate butter can be melted together(video method), then you can safely stir in the sugar. Hope this helps! That book sounds tempting, enjoy the book and the eclairs - with the sauce :). Do let me know.
Thank you for your suggestions! I took your advice- heating the butter, sugar, and cream. Then, I took it off the heat and put the chopped chocolate. It worked perfectly, thanks! I enjoyed learning more about how chocolate works, what it likes and doesn't like, haha. Now I was really able to enjoy the eclairs :-)
I just watched a video after this video of a woman melting Hershey chocolate chips with water in a sauce pan and bowl or heat resistant bowl covering the sauce pan. So I guess it can be melted. I say this because I want to save time from cutting up chocolate to small pieces. This video is still helpful.

Dipankar, I think moisture got into your chocolate, so it seized up.
How much water did you use in the pan before you placed it on the stove?

But when there is liquid to be used along with it - like milk, cream or water, it is much easier. I don't think you need to use the method in the video for this sauce.
Am so glad Lisa, here's to more chocolate desserts and bakes in your kitchen! :)
Likewise! I know I'll be coming to your videos for help :))
I we'll try it tomorrow morning 😊👍😁
It is really helpful... I love it...❤️❤️👍👍

I just watched a video after this video of a woman melting Hershey chocolate chips with water in a sauce pan and bowl or heat resistant bowl covering the sauce pan. So I guess it can be melted.
