    I usually just melt chocolate with my mouth and spit it back into a empty bowl. it's time consuming but it gets the job done. For my chocolate fountain it took me about 2 hours but it was a hit at the party. Everyone enjoyed it. worth the 2 hours spent.

    Im so happy that I searched this up before trying to melt my chocolate because I wasn’t gonna do ANYTHING that was said in this video and my chocolate wasn’t gonna turn out good at all😭😭😭😭 im so glad I decided to check and watch a video first👋🏾😭 saved me the trouble of a messy kitchen 👍🏾

    I tried microwaving chocolate to melt it once.
    Little tip, don't do that, I ended up with a cracked bowl and ruined chocolate.
    Edit: You can get away with it doing it at 5 and 10-second timings, don't do the stupid thing I did and put in for over a minute at a time.

      Halvos hey! I messed up my double boiling so I went for the microwave for the 2nd try. I heated it for one minute ... stirring every 15 seconds, came out perfect 🙂

      Halvos Thats what brought me to this video. My chocolate burned. Thankfully the bowl has no cracks, but the chocolate is completely ruined. I'm gonna try it this way.

      If you use a microwave safe bowl, it shouldn't crack. Also, when microwaving chocolate, be sure to do it in short bursts. 30 secs, stir, 20 secs, stir, and then 10 secs, and stir again. A microwave heats unevenly, so if you don't stir, you'll end up with parts burnt and parts not melted. Another tip is to chop up or grate your chocolate to smaller pieces so it will melt easier. Hope these tips help in some way or another. =D Good luck with your chocolate adventures~

      Try adding full fat milk to the lump. Just 3-4 tbsp should work

      Same! I just ruined 2 bags of the only chocolate I had trying to make dipped strawberries because my bowl didnt sit flush in the pot like his and it turned to a lumpy mess! I had no idea the water was the issue. Drat!

    When melting my chocolate, I had ended up with ceased chocolate. I tried Thomas' method, adding a teaspoon at a time of hot water and it worked! The chocolate became smooth!

    Thank you ever so much for that, I decided to melt some chocolate for bananas but my partner had burnt the chocolate so I typed in " best way to melt chocolate " and this came up and boy am I glad I watched it as it was an absolute life saver to recover the burnt chocolate and worked amazingly, thank you very much and you now have a new subscriber ;).

    I thought that I had followed the instructions exactly in another video of how to melt chocolate. The presenter said it was simple, and yet my chocolate seized up. That video gave no advice on what to do if it stiffened up. Thanks for the boiling water tip. It worked beautifully, and saved the chocolate mousse that I was making.

    Jeeze...I just learned a major lesson. Years ago when I made the mistake of using a washed off (wet) wooden spoon to stir my chocolate and created a bowl of candy bar. I threw it out. Now I learn that a couple of teaspoons of hot water and I'm good to go. Thanks for this great lesson!

    What if you want to put a liquid flavouring in? Would you just add some at a time whilst melting over a double boiler?

    Great tips, never thought of using hot water on seized chocolate. One way I've found that works well on reviving seized chocolate is combing it with a saturated fat such as shortening or coconut oil, so that when it cools it will still maintain some coagulation to be drizzled onto baked goods, etc.

    How do you temper chocolate? I melt my chocolate in the microwave, and when it is all melted I add a few more chunks of the hard chocolate and stir to melt. I found this method somewhere but was wondering if this was truly tempering the chocolate? Thanks!

      Its not actually tempering requires you to raise the temperature and then lower it the temperature and that type of shtuff

      Tempering is when you cook something like chocolate or eggs and than bring it down to a certain temperature than raise the temperature again

      cocoa butter in chocolate needs tempering
      vegetable fat/oil does not
      tempering= 30 seconds MICROWAVE stir.
      20 seconds take out and stir
      10 seconds stir
      repeat 10 seconds until melted

      Yes, this is one of the methods of tempering, though I seem to remember more steps are involved. This method is called seeding. Look it up.

      Debby Kaufman the method you use is called seeding and you need a thermometer, the best way is to microwave 10 seconds, stir, microwave 10 seconds and keep on doing it until it is melted but still quite thick. Tempering Chocolate is basically rearranging the cocoa butter molecules since it goes in the wrong order once it gets too hot, microwaves apply minimal heat in short bursts so the cocoa butter won’t go in the wrong order.

      Mitch Tatsuoka sure make it the way you did with confectionery sugar. Here's some tips
      Use a larger bowl
      Add a bit at a time
      If these didn't work don't worry about the mess, it's nearly impossible to use this type of sugar without it exploding, just wear an apron. Good baking:)

      It's called being careful. Anything on the outside/bottom of your bowl will be spread around while cooking/baking, and before you know it, you put your spatula on a wet spot.

    i've tried this to my seized white Chocolate. it was really helpful. thx thomas!! my chocolate is really silky and shiny, despite the fact before that it was a big disaster with lumps and cocoa butter liquid.

      Me too...! I was trying to make chocolate coated butterscotch balls. Butterscotch balls came out great. Chocolate melting, which I thought was easy, turned out to be a mini disaster...all because I wanted it to be richer with butter.. and butter HAS MOISTURE!!

    Thank you so much, I found that after I'd redone this properly without seizing up the chocolate, and I'd used the good batch, I mixed the seized chocolate in with the good still hot melted chocolate and it mostly came back without the need for water

      I'd say dry them well before baking. Your fingers shouldn't stick to them, but, of course, they shouldn't dry out completely. But, probably, by now you've figured it out =)

      Maunster! If the chocolate becomes actually BURNED, it is DISGUSTING and bitter and also filled with burned sugar (if sugar content in chocolate) which, the more acid ash you have after eating, the worse you're going to feel, plus it ruins the taste in any product. Seized chocolate, NOT BURNED is still worth using in something else if you cant get it fixed. SADLY.. there's a LOT of burned chocolate in landfills globally, SADNESS. lol

      If it's a sauce , cooking a potato in it can help, it will absorb the salt...

      Add sugar too sugary add black pepper too black peppery add salt just try a little bit at a time and even it out to your taste.

    This is exactly what I was looking for. I melted my chocolate in double boiler which was silk n smooth. But then I added beaten butter and powered sugar to it, which was not really mixed up well. As soon as I added this mixture to melted chocolate, it became like a rock. I’m heartbroken. Let me try adding boiling water a teaspoon at a time and see if I can revive it. Fingers crossed!!

    You can melt it too, if you put it with hot water outside and when it’s going away from the bowl then u can put milk in, not too much. stir and done

    I watched this video because yesterday my chocolate was melted but there were like little clumps in it... so it was smooth and shiny end droopy but still there were little clumps in it
    Maybe I should have stirred? XD
    I just waited for it to melt :3
    Edit: after I posted this I tried again and it just melted perfectly without more stirring... uhhhhhhhh
    And I like to eat the melted chocolate :3

    If you do it in the microwave, never microwave the chocolate for more than 30 seconds, or 20 to be safe, at a time. Stir it in between, which will usually help the chocolate melt further so you only really need to microwave for 30 seconds twice

    I stuck melting chocolate in the microwave.
    I did it today,and noticed a light flicker for a sec while looking for something.I saw it again,and watched carefully.
    Turns out that was FIRE COMING FROM INSIDE THE BOWL OF CHOCOLATE
    When it came out,it tasted burnt a bit,but still good
