thank you so much for an amazing recipe Stay at home chef . God bless.

I made this cake on 12/22/22.
It is still SO moist. It's an excellent recipe.
I used fresh milled soft wheat flour.
I also cut the recipe down by 1/3, because I didn't need such a large cake.

Pro tip for those of you that didn’t already know: you can easily divide this recipe into thirds for one layer or two thirds for two layers (1 cup of flour for one layer, etc.) for the eggs if your making one layer just do one large egg but if your doing two just use three eggs
Also instead of just warm water I mixed in a little bit of coffee powder just to make the chocolate flavor pop ( not a fan of coffee but you don’t end up tasting coffee flavor so all’s good, but better)
I also made this a two layer and it was super delicious and moist, for the frosting I just used my own vanilla cream cheese frosting recipie :)
Edit: for all of you wondering here is the adjusted recipe for only two layers that I used [pan size 9x9 in.] :
    2 cups flour
1 1/4 cup sugar (the real recipient divided is 2 cups sugar but I find that way too sweet)
    1 cup coca powder
    2 tsp baking soda
    1 tsp baking powder
    1 tsp salt
    3 eggs
    1 cup buttermilk
1 cup warm water (with about a teaspoon of coffee powder mixed in optionally)
3/16 cup oil (fill a 1/4 cup measurement with about 3/4 filled)
    1 tsp of vanilla
    Enjoy :)

Substituting strong coffee for the hot water, and melted butter (or if you want to get fancy, clarified butter) for the oil won't change the consistency of the end result but it will greatly enhance the richness of the cake.

    • @null0byte
      @null0byte 8 ปีที่แล้ว +3

      The Stay At Home Chef
Ok. Your recipe is very close to a recipe I had gotten a couple decades ago from (of all places) the American Heart Association Cookbook called Black Devils Food Cake. The only difference between them is the other one used hot strong black coffee to enhance the flavor, the baked texture is identical in appearance to this one, just darker due to the coffee, and extremely moist as well.
If you say using butter changes the moisture I'll take your word for it, I've just been going through my old recipes and replacing oil with clarified butter and (at least for me) the results haven't really changed. But, I will admit I was basing it off how very close the two recipes were.
One thing I like to do with mine, since it appears to make about half the amount this one does, is turn it into the second layer of an overload cake. Bottom layer flourless chocolate cake, top layer the black devils food, and then a white chocolate whipped frosting.

That's not true, the oil gives the cake a moist texture, butter doesn't...

    • @null0byte
      @null0byte 7 ปีที่แล้ว +1

Luc Van kasteel The poster of the video already addressed that, and I misspoke because I generally use clarified butter, mainly for the flavor (just like I substitute strong black coffee for the water). *for me* clarified butter does not dramatically alter the moisture of the cake enough for me to notice.
The removal of the milk solids from the butter will get it closer to oil, but yes oil will work far better than butter of any kind (clarified or no) if you're going for the full moisture. If that's your goal, just stick to something like the strong black coffee or a darker cocoa powder (if you can find it) to enhance the flavor.

I tried a version of this cake. I used coffee instead of water (it doesn’t taste like coffee at all but it resaltes the flavour of chocolate), I usually don’t use too much sugar so I only put 2 cups of it and a little less of chocolate powder. The result was a mix a little bit less liquid than she shows in the video although I don’t exactly know the reason (in anything, I added less of dry ingredients)... but, however, I ended with one of the most delicious cake I’ve ever tasted. It was extremely moist and full of taste, and with every day it was more and more assented so it incressed its flavour. After trying lots of recipes, I have to say that, to this day, this one is my favourite one (with all the little things that Inchanged on it).

I also changed the frosting, I only used icing sugar no cream cheese and I used only 2 or 2 1/2 cups of icing sugar more than that it will be too sweet for me. You can add a little bit at a time then taste it.

One thing to note is to make sure your cocoa powder is pure cocoa. I found out that the cocoa I purchased had Sodium Carbonate in it and this would compromise the added baking soda. Just a heads up but this recipe is perfect!

I used roughly a third of this recipe for one 8" pan and while it cracked a little on top and I will probably use a 9" pan next time, it turned out DELICIOUS. A tender, moist crumb with amazing chocolate flavor. I subbed out just a little of the hot water for hot coffee, and used a buttermilk substitute of whole milk + white vinegar. Absolutely the best chocolate cake recipe I've tried so far. I used your cream cheese buttercream frosting recipe as a basis to form my own version, it came out light, melt in your mouth, not too sweet and so delightfully chocolatey! For me it was the absolute perfect pair with the cake. My husband and I both ate 3 slices back to back!!!! Thank you so much.

Just a pass along tip. I live by myself so a entire cake is too much for me. Since I started baking bread I weigh everything in grams. Now I just buy a box cake and divide whatever the grams are on the front of the box into 3. Last time it was 144 grams and then I just use one egg a third of a cup of water and two tablespoons of applesauce. I put it in a small loaf pan and bake at 350 Fahrenheit for 26 minutes minutes. then I make chocolate peanut butter buttercream frosting for the top. I get five pieces out of a loaf pan so a third of a box last me almost a week for less than a dollar . I lost my wife so now I'm learning how to cook for one. It's hard but I'm getting there.

I am Asian and I am used to having a dessert that is not too sweet. So my taste will be different from a typical American. I spent 7.25 hours making this cake in one day with 3/5 of the amount of sugar suggested in the recipe. Half of the sugar would be a little extreme. I made only 1 layer instead of 3 layers so everything was divided exactly by 3, even the frosting. Even when I already reduced the sugar, the frosting was a little bit too sweet for me and I added 8g of cocoa. Besides, 1 layer was enough for me. At first, I thought with so little amount of ingredients the cake would not be big enough. However, after baking it, adding the frosting and the decoration, the result was a pretty huge and beautiful cake.
Everyone LOVES it. My dad said the cake was really delicious and he rated it a 10 out of 10, even though he does not like cakes at all. He even ate a second piece and told me that he would be eager to eat the pieces left in the fridge. When being asked to comment about the level of sweetness of the cake, he said: “The sweetness is just right, not too sweet or less sweet. The sweetness of this cake is similar to a cake of a 5-star restaurant, no joke”.
My cousin who is picky said it was tasty too. 10/10 again. She also wanted another piece for her daughter and said she would drop by my house other times to eat the cake haha. I had for myself a second piece too.
I have watched around 6 videos making chocolate cake. Then I think the reason why this video has so many views is because of the success rate of the cake. The recipe she suggests ensures that you 99.9% get a tasty cake. Just follow this ultimate recipe, make changes to your preferences and you will succeed in making this cake!

A tip for equally dividing the batter: use the tare on your scale to zero and then measure the weight of the mixing bowl. Then weigh with the batter to get the total batter weight. I tare my scale with a second, identical, mixing bowl and then just put the bowl on with the batter to get the actual weight of the batter.
Divide by 3 and you know how much to put into each cake pan. Tare the scale with the cake pan on it and add 1/3 of the total batter weight. Your layers will be exactly the same - or as close to that as nature and your oven and your ingredients will allow.

Successful in the first attempt itself🥰. I just feel that the following changes to the recipe would be nice according to my experience:
2 cups of sugar would be enough if you guys don’t want it to be too sweet.
1 cup of milk would be enough or it might just turn watery for some. Pls add the milk gradually and see how you want the consistency to be.
Beat the egg white separately if you want your cake to be a bit more softer.
Apart from these changes the recipe is just amazing!! Good work @thestayathomechef👍🏻
