For the cheese sauce, you'd need to use low heat, so next time try your best to not make your sauce boil or simmer for too long or else the water and fat molecules are going to split. Also use more American cheese, that shit is full of emulsifiers so it's great for cheese sauce. If you don't want to use American cheese, start with a bechamel and add what ever kind of cheese you'd like
