Just to help anybody who is curious, if you change the pH with lemon/lime/citric acid/malic acid/etc you may need to use a different amount of Agar powder. Agar is very forgiving though because you can just reheat your gummies and add more to achieve the desired texture. (I learned this making acidified mandarin orange “roe” for a cocktail competition)

Pro tip: If you let them sit for a few days, they dry leaving them with a concentrated flavor and chewier texture.
Cook the agar agar in the water and then add it to the cold strawberry mixture. That way you don't destroy the vit c and other vitamins that are normally destroyed by heat. If it would work.

We made these yesterday. Conclusion: this is jello, not gummi. They're not chewy. Slightly disappointed, but will keep adjusting the recipe. Next time without lemon juice. This made it way too sour and the kids didn't like them.
Maybe try real gelatin, instead? I've had store bought vegan gummi bears before and they did indeed have a different consistency. So I believe, it's due to the plant based thickener. But thanks for the warning about the sourness, that's good to know in advance!

@@suzannevandoorn5628 Good luck experimenting! Another thing one could try is dehydrating them. Maybe as more of a fruit leather then, to speed up the process. Getting some more of the moisture out, might give them a chewier consistency. Maybe they're just too moist, especially when freshly made.

I've had my alpha-gal allergy for over a decade now due to a lonestar tick bite so I can't have regular beef derived gelatin which includes marshmallows & most gummy candies too so this might actually be a great work around for me so thank you for sharing.

I mean, honey is only slightly better than sugar and heating the whole thing up will turn the fructose into a processed sugar and kill most of the vitamins. It still has all the fibers, and maybe a few of the vitamins left thus making it less unhealthy than regular candy but i wouldn't call it super healthy, or healthy at all.

To be fair, a 100g of gummies is quite a lot. 10g of sugar is still high of course, but I'm honestly pleasantly surprised. Not to mention it's mostly natural sugars.
Blending the fruits with the seeds can add bitterness. You can cut or crush then infuse them in the honey for a cleaner flavor. But you will also miss out on the fiber content

If their claims of being 100% pure (which means nothing really since it's a given, at least here in the EU) are true, then being grass fed doesn't have any impact on the product. I'd be very careful spending a premium for such brands

Not to be a pedant here; but if you are "Striving for healthy goals"; then I advise you to do some simple research. This video is horribly misleading at best. For starters, "honey" IS sugar. Like thats just what it is, its 98% fructose (fruit sugar) and glucose (table sugar). Elderberry has absolutely no scientific backing and does absolutely nothing but provide citric acid for flavor here; especially because the vitamins get boiled off during cooking. The absolute only compelling and even then, pseudo scientific basis to call this "healthy" is its not polluted with a bunch of preservatives nor pushed under factory manufacturing. Its probably a fine snack; but it *is* just candy. Its functionally identical in every way to gummy bears youd get from a store. Honey isnt specifically "healthy". some of the stuff IN honey (of which you can take a multivitamin and get lol) IS beneficial, but in general its functionally pure sugar in most cases.

Just to help anybody who is curious, if you change the pH with lemon/lime/citric acid/malic acid/etc you may need to use a different amount of Agar powder. Agar is very forgiving though because you can just reheat your gummies and add more to achieve the desired texture.

Healthy Fruit Gummies Recipe
Ingredients:
1 pound of strawberries
Juice of 2 lemon
1/3 cup of honey
1 teaspoon of elderberry syrup
3/4 cups of water
Agar agar** (see instructions)
Instructions:
1. Clean and dry the strawberry, then cut the tops off.
2. Add the strawberries to a food processor along with the juice of 2 lemons, honey, elderberry syrup, and water.
3. Blend until super smooth and measure your mixture.
4. For every 1 cup of blended strawberry mix you have, use 1 teaspoon of agar agar. I had close to 3 cups so I used 3 teaspoons of agar agar. Add in your agar agar and mix well.
5. Using a syringe, pipe the strawberry mixture into silicone molds. Let sit for 30 minutes.
Pro tip: If you let them sit for a few days, they dry leaving them with a concentrated flavor and chewier texture.
In the video you’re cooking the mixture but I don’t see that in the written recipe. Do we cook it and for how long?
Cook the agar agar in the water and then add it to the cold strawberry mixture. That way you don't destroy the vit c and other vitamins that are normally destroyed by heat. If it would work.

Also good proteins from the honey too and from the lemon so basicly all vitamins and proteins from the mixture but the sugar will stay

We made these yesterday. Conclusion: this is jello, not gummi. They're not chewy. Slightly disappointed, but will keep adjusting the recipe. Next time without lemon juice. This made it way too sour and the kids didn't like them.
Maybe try real gelatin, instead? I've had store bought vegan gummi bears before and they did indeed have a different consistency. So I believe, it's due to the plant based thickener.

Another thing one could try is dehydrating them. Maybe as more of a fruit leather then, to speed up the process. Getting some more of the moisture out, might give them a chewier consistency. Maybe they're just too moist, especially when freshly made.
@@raraavis7782 thats a good tip. I wonder how though, I dont think you can heat them up. Maybe add less water to the mixture. I'll have to experiment to see what works to make them firmer qnd chewier.

Oh, you can dehydrate with low heat - it just takes longer. Kinda like blowdrying your hair on the cool setting. But starting with as little water as possible and maybe a higher sugar content would definitely be an advantage 👍🏻

Oh wow, I didn't know there was seaweed derived gelatin. I've had my alpha-gal allergy for over a decade now due to a lonestar tick bite so I can't have regular beef derived gelatin which includes marshmallows & most gummy candies too so this might actually be a great work around for me so thank you for sharing.

@@DaveYognaut yeah but the sugar is from the honey. It doesn’t spike your glucose in the same way as table sugar. It even has the benefit of reducing blood sugar believe it or not. I wouldn’t want to eat half a cup of honey in a day or anything, but it can 100% be included in a healthy diet.

I mean, honey is only slightly better than sugar and heating the whole thing up will turn the fructose into a processed sugar and kill most of the vitamins. It still has all the fibers, and maybe a few of the vitamins left thus making it less unhealthy than regular candy but i wouldn't call it super healthy, or healthy at all.

To be fair, a 100g of gummies is quite a lot. 10g of sugar is still high of course, but I'm honestly pleasantly surprised. Not to mention it's mostly natural sugars.

It is basically homemade jam that is a little more concentrated and filled into littke forms
Blending the fruits with the seeds can add bitterness. You can cut or crush then infuse them in the honey for a cleaner flavor. But you will also miss out on the fiber content

They get their product from cattle raised in Brazil, so it's most likely a product of rainforest deforestation. I bet that "Green America" badge only pertains to the part of the company that's in the US. Don't fall for the marketing buzzwords
If their claims of being 100% pure (which means nothing really since it's a given, at least here in the EU) are true, then being grass fed doesn't have any impact on the product. I'd be very careful spending a premium for such brands

There’s literally nothing healthy about this. All these ingredients are just a different variant of sugar and the vitamins in the strawberries are gone after boiling them.
Not to be a pedant here; but if you are "Striving for healthy goals"; then I advise you to do some simple research. This video is horribly misleading at best. For starters, "honey" IS sugar. Like thats just what it is, its 98% fructose (fruit sugar) and glucose (table sugar). Elderberry has absolutely no scientific backing and does absolutely nothing but provide citric acid for flavor here; especially because the vitamins get boiled off during cooking. The absolute only compelling and even then, pseudo scientific basis to call this "healthy" is its not polluted with a bunch of preservatives nor pushed under factory manufacturing.
Its probably a fine snack; but it *is* just candy. Its functionally identical in every way to gummy bears youd get from a store. Honey isnt specifically "healthy". some of the stuff IN honey (of which you can take a multivitamin and get lol) IS beneficial, but in general its functionally pure sugar in most cases.

@@Warmaka well, if one has diverticulitis you can't have whole seeded strawberries. Therefore the gummies are safer. Plus sometimes you have a craving for a sweet treat and forever chemicals are in twizzlers. I'm choosing the healthier route.
