My question is out of this video's context anyway. When a project has already started, and project duration reviewed, maybe to finish earlier, how can the new s-curve be plotted ?

You can generate the curve at any stage for Planned, Actual and remaining (Manhours, Quantity and Cost). You can extract the required data from the resource assignment or spread sheet option by using the group & sort option and time scale.
