I'm a Singaporean and I'm frankly embarrassed by all the comments by other Singaporeans lol like calm down, a dish called "Singapore Noodle" does not mean it has to originate from Singapore, it could just be a dish where the ingredients are influenced by Singaporean dishes, with a western twist to it.
As a Singaporean I already know this dish isn't authentic, but that doesn't matter at all it looks so yummy! Will give it a try soon. Well done Donal for not being afraid to try different things. :) Love your recipes, just made your chilli lemongrass chicken last week! Looking forward to the new cook book!

Ok I really must try this! I usually cook the rice noodles separately and add them into the veggies/chicken/shrimp stir-fry mixture and toss. Never occurred to try cooking it in stock
I made this and it was great! I added mushrooms and a bit of honey instead of the sugar...I just thought the sauce would coat the noodles better if honey was incorporated
This is called mee bihun in malaysia, i normally cook this with only green beans, i will be using this method the next time i cook it, it so easy to make.
Sarah Graham really he did the first bit wrong. In Asian food they would grind up the chilli, ginger and garlic into a paste. That way it is very hard to burn it. If cooking say with onions I'd heat your pan up hot, add oil and the onions turn the heat right down and add the garlic. That way they don't burn (also plenty of stirring !) if you add garlic to a hot pan on its own it will burn super fast !
No matter what type of cuisine I cook I do onion, or whatever vegetable that takes longer to cook first and then add in the garlic. I had the same problem as you but this method really helped me.

Hi Donal! I think you could have just soaked the rice noodles in some hot water so everything stays pretty dry. Everything would have done better if everything stayed pretty dry and hot temperature!
People who say this isn't a dish from Singapore - this is just the name of the dish that we're all familiar of, similarly to how half this dishes in a chinese takeaway aren't even consumed in China
Singapore noodles or not, this looks great :D As for the ingredients, guys just put whatever you fancy, or whatever you have in your pantry. Make it to suit your own taste!

This dish is all over Hong Kong. I eat it frequently when I travel there. I've never found them in Singapore though. It's one of my favorites!

no breaking it is not the only way, you can soak it in cold or hot water for a few minutes first

I love garlic, but any time I cook with it I always burn it. Any tips for cooking it better?
Either lower the heat, stir more often, or add in other bits only a few seconds after adding the garlic.
Maybe add the garlic at the end of the frying process ? For example in this recipe you could add them just before the noodles go in.
