How to make traditional German Gherkins - Essiggurken

  • In this Video I show you how to make traditional German Gherkins.
    This Recipe is a traditional recipe from the "Spreewald". Spreewaelder Essiggurken are famous in Germany and much loved.
    For this Recipe you need:
    About 3 kg gherkins,
    Onions
    500 g sugar
    65 g salt
    1 liter vinegar (min 10% acid)
    5 liter water
    some spice like
    Mustard seeds
    All Spice
    Pepper Corn
    Bay leaves
    you can add Gloves, Dill seeds, Coriander seeds and chili's as well.
    If you have put some fresh dill in it as well
    This makes about 10 jars - size 1 liter
    Bring the liquids, sugar, salt and spices to a boil and let cool down for 1-2 hours.
    Put the gherkins in the jars and add onions and bay leaves ( and dill if you get). Fill up with the spice, vinegar mixture and close the jars.
    Put in preheated oven at 100 C (212 F) for 20-30 minutes.
    The finished jars have to rest for at least a week or two until ready to eat.

    My German Grandmother made the best Gherkins and we never got her recipe. She was also from East Germany. I look forward to trying this recipe! ❤

    Made this tonight, but because my pickling vinegar was 7%, I adjusted the ratio. 2L vinegar, 4L distilled water. Kept the sugar and salt the same. Looking forward to trying them in a couple weeks!

    Totally amazing as being part German as my mother was German from Berlin I love all things German grew up eating drinking all things German I miss my mother and mostly mien Oma. She was amazing cook I love Gherkins I can eat loads thank you for sharing take care ❤️❤️🇩🇪🇩🇪🇩🇪🇩🇪🇩🇪🇩🇪

    Spices used are cloves, allspice, mustard seed, pepper, dill seeds, and coriander.

    Could I use fresh bay leaves instead of dried bay leaves?

      Yes that would work. But I would use more as fresh is not as flavourful

    I like this easy recipe but I won't put the jars in the oven as I'll simply pure the spicey liquid when it's hot into the jars like making jam & this should create a vacuum & seal / cook the contents while cooling down ?

      I've not tried this recipe yet but I think the jars could be flipped and insulated with a towel after the boiling mixture is poured in. Thats how I do my jalapenos.

    I tried the 1:5 vinegar to water ratio and I find the taste not vinegary enough, compared to commercial Austrian gherkins I’ve tried, e.g. Gurken Prinz. I’ve also seen recommendations online that equal parts vinegar and water is best for safety. Can you comment?

      It really depends on the strength of the vinegar to start with . I use 10 percent and this gives heaps of sourness and is enough for presentation.

      you can, but I would not recommend as it has not enough acid. It will work, but the result is not as good.
