    💚 Quick Refrigerator Pickles Recipe
    From The Prairie Homestead Cookbook: www.homesteadcookbook.com
    Per Quart Jar You Will Need:
    1 cup water
    1 cup vinegar (white or apple cider)
    1 tablespoon fine sea salt
    1 tablespoon organic sugar
    4 to 6 cucumbers, depending on the size (about 2 pounds)
    2 cloves garlic
    3 heads fresh dill or 1 tablespoon dried dill seeds
    1 tablespoon yellow mustard seeds
    1⁄2 teaspoon black peppercorns
    1 bay leaf
    Combine the water, vinegar, salt and sugar in a small saucepan. Bring to a simmer and stir until the salt and sugar is dissolved. Remove from the heat and let cool.
    Trim the blossom ends from the cucumbers and cut the larger ones into spears, if desired.
    In a clean 1-quart jar, combine the garlic, dill, mustard seeds, peppercorns, bay
    leaf.
    Pack the cucumbers on top. Fill the jar the rest of the way with the brine, taking care to cover the cucumbers completely.
    Cap tightly and shake well. Icebox pickles can be eaten just a few hours after you make them, but the flavor vastly improves after at least 48 hours in the fridge. These pickles will last about 3 months, but the garlic flavor will intensify and the pickles will increase in spiciness the longer they sit in the refrigerator.

      Lol thanks for that! What happens if you don’t add the sugar, I’m prediabetic so I eliminated it in my jar. Also does large whole uncut cucumbers take longer in the fridge to ferment?

    They always say the Apple Cider Vinegar changes the flavor, I always use white vinegar, and always put my garlic on the bottom of the jar. Fresh drill is always the best.

    Great tip on the brine, didn't know till I looked it up that the pickling brine can last 6 months in the refridgerator. That just refilling that brine with replaced cucumbers. Saves on making the brine each time. Pickled cumumber last 3 weeks but the brine it self last 6 months.

    Redmond’s “real salt” is my favorite too. I know people that use that for kraut and all kinds of other things. It is mined in the US and does not contain any kind of refining and they use high-quality non-nickel or aluminum equipment to mine the whole “raw” unrefined salt. Because its mined in the USA, you know that it is going to come from a real ethical source.

    The reason you cut the blossom end is because there is an enzyme there that will make the pickle soft (and apparently not safe to eat when pickled). Me, I have cut both ends when I pickle so that the brine has a faster rate of getting into the cucumber.

    I added the step of 4 hr cold water ice bath prior to and the crunch factor was really up there!

      I assume you mean a 4 hour ice bath for the cucumbers before you pickle them? Do you cut them first then pickle them or ice them first then cut them?

    I've made these pickles several times now, they are excellent. I do use white vinegar and go a tad bit heavier with cane sugar. Very happy to have found this video.

    I am back again!! I can’t believe I forgot to like or comment!!! 😂First things first.... they won’t last months!!! Since I first tried this recipe....I have to hide the jar in the fridge long enough for the cucumbers to actually get the pickle flavor!!! Living in Alaska, I love that you use dried herbs as sometimes that’s all we have!!! Thanks for sharing this recipe!!

    I learned from watching a fermenting pickles video that the bay leaf has tannins just like black tea or green tea t- that helps keep the pickles crunchy

    I learned from Mary at Mary's nest to put a bay leaf or two or a tea bag in with cucumbers it keeps them firm. It's worked great for fermenting them and i bet it will for these, too. Worth a try💜
