What a great tutorial on sweet gerkins! I typically do bread and butter pickles ! I’m definitely going to put this in my canning rotation! New subscriber today! Thank you!
I have a constant craving for sweet pickles and have wondered what it would take... I watched this whole video and it is definitely do-able! Many Thanks.
so excited to do this and have GHERKINS! I don't care for bread and butters, looked for an old fashioned gherkin recipe and appreciate this concise report. TFS!
I read this recipe in my Ball canning book today and said no way.... lol but after watching your video my little cucumbers i have left from 1/2 bushel (I used 16 pounds of them to make dill pickles) - will get started on this recipe. We have canned dill pickles and bread and butter pickles in years past but not gherkins. Thank you.
I'm very new to this and after having a couple of hars of homemade pickles, one being sweet and the other being butter, I decided that I'd really love to learn how to do this. Watching your video has definitely inspired me to see that I can do it!!! I'll be trying your mom's recipe first ❤❤❤
I’m not a fan of gherkins, prefering dill. But I decided to grow some and I used your recipe to make a batch for my husband. They are delicious! He loves them. I’m making another batch when I get more pickle cucumbers.
Great job. My wife is at me to make her some sweet gherkins. I am going to have to try to find some to buy as my garden didn't produce sufficient cucumbers for this. Thanks for the guide!
I would love to try these. They seem amazing, and having the longer ones seem perfect, because I can never eat just 1 or 2 of those little pickles you always need more than that. LOL. I was wodering should I really use a large cinnamon stick or is there a way to cut them Smaller? Cuz what could I do with the cinnamon stick after it was used in the pickles. It is expensive just to throw it away I think. And the left over cinnamon stick might taste vinagary. Or would you grind up (how much) some and put it in that way and hope the brine isn't to cinnamony tasting. LOL Just trying to save some cost and not waste food. But I really would like to make them.. Apparently you don't add any pickling crisp to it for added crunch because they turn out crispy and cruchy without it ? Sorry I am totally new at this. Your advice and help would really help me out and less anxious thank you very much for all you do to help us learn from you . 🎉🎉🎉😊😊
Hey there! I have never tried ground cinnamon, so I'm not sure how that would work. You could do a smaller piece of cinnamon stick if needed. We buy the organic cinnamon sticks in bulk (not from the grocery store!) and the price is very reasonable per stick that way. At the grocery store they are SO expensive! No pickle crisp needed, as the soaking process takes care of that. They are super crunchy! I hope that helps!
Hi Wondering if these are crisp after canning? I found the low temp process for my dill pickles and they came out great! After years of mushy pickles I had given up. Looks like great recipe! Can't wait to try it!
I've confused myself. The video says to put boiling water over the cucumbers twice on day 1 and then again on the morning of day two. However, the instructions say to start day one in the afternoon, pour boiled water and leave overnight, then pour more boiling water in the morning on day two. So, am I pouring boiling water twice or three times before I start adding salt and other ingredients? I'm concerned that they'll get mushy if I put them in boiling water too many times! 😂 Thanks for the video, though. It definitely made this process seem a lot less daunting. Yesterday, I told my husband I was in over my head. Now i feel more confident and excited. Well, except for the boiling water bit! 😉
Yes, they have that same sweetness, the same flavor, and the same crisp texture. The only thing that is different is the aftertaste. The ones from the store are typically made with corn syrup and (for me at least) they have a bitter aftertaste. These don't!
The thing I have about cutting the ends off. I did that last time I made dill pickles and all the pickles were soft and mushy. So I am not going to do that again. But I love sweet gherkin definitely going to try this one.

Hi there! We were only able to find "small" cukes at the store... we recorded this off-season and our own cucumbers hadn't come in yet. Typically we use the tiny ones and they turn out really well. You can buy "gherkin" cucumbers, but we prefer the straight 8 variety, picked every day to make sure they are no bigger than a thumb! I hope that helps :-)

Hi Jessica! Welcome! It’s my mom’s and she wasn’t sure, but I would guess about 2 gallons. Basically you just need a container that will hold the cucumbers with enough room at the top for about an inch or two of liquid by the last day. I hope that helps!

Yes, very crisp! The soaking is the key and they are that perfect crisp texture like the tiny gherkins you get at the store
Great video, thank so much for the recipe.

Hi Victoria,
I just finished canning my sweet pickles! How long do I have to wait to try them?
Yay! We have eaten them the next day, but they are *best* at least 2 weeks later.
Love your video. You look extra pretty in the discus color blouse!
Love sweet pickles. Brand new to canning, are these close to the same taste as store bought?
Yes, they have that same sweetness, the same flavor, and the same crisp texture. The only thing that is different is the aftertaste. The ones from the store are typically made with corn syrup and (for me at least) they have a bitter aftertaste. These don't!

Hi. May I ask…is there a difference between this brine and a bread and butter pickle brine, and if so, could you share what it is? Thank you.
Yes, big difference! However I don’t have a recipe for bread and butter pickles. Neither does my mom. I’m sorry!
How do you keep the pickles from getting soggy.
No offense too long of a video shorten it up
No it's not, for someone whose never done this before a longer more informative videos is the best

As long as there are no chips in the enamel, yes. Otherwise, the vinegar and other ingredients will react with the metal beneath! :-)

So, I misunderstood what I was seeing and actually boiled the cucumbers for about 5-10 minutes before I realized my mistakes. Will that be an issue?
