      You should try soya chaap. There different types of soya chaap. Malai (cream) soya chaap, tandoori soya chaap and i can confidently say that it is THE BEST substitute for chicken. It is soooo delicious and it's VEGAN!! 😤😤

    So many non vegans wonder what eating vegan is like…as in “isn’t it super boring and tasteless?” I think Indian flavours and techniques are def one of my favourite go tos because of complexity.     Tried this one out today. Also used mortar and pestle for the first time. Nisha, I would NEVER find anything even close to this in my city. Anything Indian and vegan is merely okay in local restaurants. But this curry is not just food, it's an E X P E R I E N C E. Thank you so much.     Nisha, I don’t know where to start thanking you from the bottom of my heart for all the amazingly good recipes you design. I did not even intend to be vegan and for the past year ever since I am following you, I found myself eating mostly vegan - mainly your recipes and variations of your recipes. I think what stands out in your work compared to the others is the fact that you create complicated and sophisticated cuisine that take a lot of work to bring out all the great tastes of the ingredients. I have seen this very clearly in your Indian and Mexican recipes and have cooked some of your recipes (like Malai Kofta and crunch wrap supreme)n and nobody noticed they were vegan. Honestly many of your recipes taste better than the original version - mainly the Indian ones are awesome! Thanks a lot for all these great work, creativity, attention, precision and hard work, not to mention your unique sense of humor and intelligence that makes all these videos not only a cooking class but a means to smile, chill and lighten up in this crazy messed up world. You are the best!

    Ok, I just made this. It is SO GOOD. There were some ingredients that I didn’t have or couldn’t find and it still turned out delicious. I also used cauliflower instead of tofu.

    This was delicious and quite spicy. We served it with a dollop of the kite hill Greek “yogurt”, and that was amazing. We strongly recommend adding that as a serving suggestion. It also works well with cauliflower alongside or instead the tofu.

      Its heavenly with brocolli since it soaks up so much flavour! You can also use mushrooms. If you're vegetarian, you can use an indian cheese called 'paneer' which is basically thr dairy version of tofu

    This was my first (mostly) vegan dish I've cooked and wow! Soo good! The idea of tearing the tofu for that added texture is ingenious! We have baby mouth so we omitted ALL the chillies and it was perfect. This will be on rotation quite often. Thank you!

Would you consider doing a video about Indian spices (or pointing me to one you may have already posted), what kinds to have on hand for the majority of recipes, how to store them (including in a humid environment - I'm in Hong Kong where it's humid most of the year), etc. I would love to know more about the spices and how to use them, but they're a bit daunting sometimes. Thank you again!

      The basic spices we use in India
      Whole spice
      Mustard seeds
      Cumin
      dry red chilli
      powdered spices
      Red chilli powder
      Coriander powder
      Turmeric powder
      extra flavour
      Roasted cumin powder
      Dried Fenugreek leaves
      Also, you can use readymade
      Garam masala powder
      Chat masala ( extra tangy)
      This is no way an exhaustive list but just the common ones we use...We also use nutmeg, star anise, cardamom, cloves, cinnamon among other spices depending on the dish

    I made this last weekend and it came out absolutely delicious. It was quite spicy, but everyone loved it. thank you for sharing the recipie. I had never thought of "chunking" the tofu, but that was a grreat tip for all the flavors to coat and absorb.

    As a Brit, chicken Tikka Masala is a fave and was probably the first Indian food I tried (though allegedly invented in Glasgow, I believe it was still created by an Indian person, so it counts in my eyes!). Since going vegetarian I mainly eat vegetable-based curries or paneer masala but I’m looking forward to trying this as a plant-based version! I also love that you encourage using the coriander stems - I do the same so as to reduce food waste and get the most out of the flavour!

    Gooooodness, this was soooo delicious!!!
    Whipped it up for some friends yesterday evening. I usually don't get back to comment the recipe that I tried out but I had to come back and tell you, that you did a really good job with this one.
    (The only thing I'd like to critizise: the written recipe is a little complicated to follow and not so clear. I lost myseld often in the many ingredients and steps. Maybe there is a way to stucture it a little clearer. But thats only on a side note.)

    I'm excited to try this - chicken tikka is my crutch, it's the only meat dish I still eat. If this recipe anywhere close to as good as your lentil curry then it's going to become a staple in my house!

    I just wanted to tell you that you have truly changed my life with your delicious recipes. I have been a vegetarian for many years (nearly vegan but I won’t give up cheese 🤪) and my favorite ethnicity of food is Indian, but I grew up eating it with meat as the main protein so I’ve been learning how to incorporate tempeh and tofu and lentils and chickpeas as the protein in all of my Indian favorites. Your recipes are always significantly more flavorful than any other ones that I have tried online. I bought your cookbook and I love it. Thank you for putting in so much time and effort into recipe development and testing to give us such amazing recipes for free on your TH-cam channel (and blog). Also your helpful tips regarding substitutions and different preparation methods is my favorite part. You changing your career from lawyer to Chef has been a blessing for all of us. Sincerely, someone who has watched every video you’ve ever released at least 3 times 😋

      I’ve been a vegetarian since I was a little girl -for ethical reasons- and have only recently begun to confront myself on my eating dairy… dairy is a part of the meat industry, and is no less a source of pain and suffering for those gentle and innocent animals. She didn’t insult you or anything and even said she used to eat cheese too not long ago and complimented you not eating meat! I see no judgement in her comment, only genuine interest in a better world. So I hope you don’t take this the wrong way, but maybe it’s more you feeling bad about your choice to eat cheese than her being judgemental..

    Really cool to see his omnivore perspective on your vegan cooking! I watch your channel so I can up my spice and seasoning game making cardiac-friendly recipes for myself and my fiancé, and hearing a fellow omnivore rave about how great your recipes are gave me the push to do more plant-based recipes! Indian food is my favorite and my husband's as well...since transitioning from vegetarian to vegan it has been finding restaurants that don't have animal products in their dishes.     I made this and my husband said it's the best tofu dish he's ever eaten! Thank-you! The most time consuming process was getting out all the spices. Is there such a thing as pre-made curry spices that are "good enough" so we could have something like this on a more regular basis? I just bought a "tandoori" blend (McCormick's brand). Would love a video on setting up a spice drawer for quick cooking.

      You can easily pre-make your own spice blend! And McCormick's is... okay, but if your grocery store sells other, slightly fancier brands, try those instead. The quality and blend of the spices are going to make ALL the difference in this recipe.

    Love the saucy snack comment! 😉 Have you tried freezing tofu then, defrosting, draining and cooking with it? The texture changes and becomes more meaty, whilst still soaking up the flavour. Gotta try this recipe looks mouthwatering!!x 🤤

    This looks so good! I often cheat and use store bought curry pastes and would love to give creating my own spice mixes a go. Definitely going to try this recipe but with less chillies because I'm a wimp 😂

      Haha don’t worry, I used to be a “wimp” when it came to spicy food too. I just started adding a little more heat, one step at a time. But it’ll still be very tasty as a mild version. And it’s really fun and rewarding to make your own spice blends (and your kitchen will smell so good!).

      @@RainbowPlantLife growing up my mum didnt cook with chilli at all (she used to eat very western style food) so its only been these last few years I've been trying to gradually build my spice tolerance how you describe! Still cant manage much fresh chilli in dishes though 😂
