    Cake:
    2 cups all-purpose flour
    2 tsp cinnamon
    1 tsp baking soda
    1/2 tsp salt
    generous pinch nutmeg
    1/2 cup canola or vegetable oil
    1 1/2 cups granulated sugar
    3 large eggs
    2 tbsp orange juice
    1 tsp vanilla extract
    3/4 cup 2% milk
    2 cups grated carrots, lightly packed
    1 cup crushed pineapple, drained
    1 cup unsweetened shredded coconut
    Cream Cheese Icing:
    8 ounces full-fat cream cheese, at room temperature
    4 ounces unsalted butter, at room temperature
    1 tsp vanilla extract
    3 cups powdered sugar
    Cake:
    - Preheat oven to 350°F and spray a 9"x13" pan with non-stick spray.
    - In a medium bowl whisk together flour, cinnamon, baking soda, salt and nutmeg. Set aside.
    In a large bowl whisk together oil and sugar. Add eggs one at a time whisking well to fully combine after each. Stir in orange juice and vanilla.
    -Whisk in half of the dry ingredients followed by half the milk. Repeat with remaining dry ingredients and milk, whisking only until just combined. Stir in carrots, pineapple and coconut. Pour into prepared pan and bake on the middle rack for 45-50 minutes or until a toothpick inserted in the center comes out clean.
    -Remove from oven and allow to cool completely at room temperature. Once cooled, spread evenly with cream cheese icing. Cut into 20-24 pieces and serve.
    Cream Cheese Icing:
    -Beat cream cheese until smooth. Add butter and beat until fully combined and fluffy. Add vanilla and powdered sugar and beat until just combined and smooth. Spread onto cooled cake.
    Recipe Notes:
    -Cake freezes well without icing for up to a month if well wrapped.
    -Cake freezes well if iced and cut into squares, stored in an airtight container for up to a week.
    The recipe makes for a thick layer of icing. Icing freezes well on its own in an airtight container for up to a month.

    Hummingbird Cake

      Hi, no it’s not a Hummingbird Cake. They have similar spices and pineapple but a Hummingbird Cake doesn’t have carrot but it does have banana. Both delicious though, thank you for visiting.

    That looks amazing. I have a question though. Would there be much change in liquid added if I cut the amount of pineapple in half and added walnuts?

      Hi, I drain the pineapple quite well in this recipe, so I believe cutting the amount of pineapple in half won’t change much. Not sure if it’s pineapple u don’t want in the cake or u simply just want walnuts. If it’s the latter, I’d just go ahead and add a half cup or so of the nuts, along with the original amount of pineapple. Hope this helps and thank u for commenting. Let me know how u make out.

    Excellent recipe without using a mixer. A question can I reduce the amount of sugar?

      Great question and thank you for commenting. I have not experimented with different quantities of sugar in this recipe, however, I would suggest decreasing the sugar by 1/2 cup and replace it with unsweetened applesauce. I’d love to hear how you make out with any modification.

      Hi Patricia, I have not tested this recipe with a sugar substitute. I can only suggest to sub out half the sugar for unsweetened applesauce, which still has sugar but natural vs refined. It needs some sugar to maintain its texture. Thank you for watching and commenting.

      I use erythritol as a sugar substitute, alongside 1/4 cup brown sugar or you can just do all erythritol.

    Can I use lemon juice instead of orange juice?

      Yes you sure can. There’s only a couple of tablespoons to aid in the baking soda reaction and provide extra moisture. All though the lemon juice is more tart, it will do the same job. Hope you enjoy this wonderful cake.

      Just made this cake. Thank you so much for this recipe. It smells divine. I have a fan oven and set it to175C. It took exactly 45 minutes. It’s going to be a favourite in here. The family are all over for dinner and queuing up to taste it. Happy days.
