It has rained so much and snowed so much and still raining and the snow is melting and we are in a huge mess right now. Please take good care and be careful....Keeping everyone in prayer. I love this woman she's so precious.
If I may add I forgo adding flour to the raisins and soak them in hot coffee or hot water they are so much more plump and moist in a cake.
Strain them squeeze the water out and they will be amazing!
In the North we like a little bit more spice so I add a little bit of allspice and a little bit of nutmeg as well.

Wonder if you can soak them in hot vanilla water. Would intensify the flavor I think. How long do you let them soak?

I like to soak my raisins too! They have a wonderfully light texture and the flavor is yummy. It doesn't have that "raisin-y" taste.

I loved watching this! I'm fascinated by your mixer. I tend to make mine very plain with no nuts, pineapple, dates or raisins. When I add these ingredients, I lose people with each addition. My secret to a good carrot cake is a little hand-grated fresh nutmeg.
P.S. Ina Garten says grate carrots by hand for a fluffier cake. Organic carrots tend to be more flavorful.

You did an outstanding job with that cake. The way you applied the icing and the decorations was excellent. I can see you learned from a professional. It's a labor intensive cake with the grating of the carrots and coating the raisins with flour and the chopping of the nuts but if you have the time, I'm sure it makes a big difference in the way it all turns out. The video was very enjoyable to watch.

Hello, I made your cake yesterday. I had to make a couple of substitutions. I didn't have cookling oil , so I used MTC oil. I didn't have any crushed pineapple, so I added some dries cranberry. It is very good. I think the MTC oil made it a little more dense, and the bottom and edges were a little crunchy. But everyone seemed to like the crunchy. I also added a little bit of Kitklands' orange liqueur in both the batter and frosting. Thanks.

When I was a kid.....way back in the 50's, my Mom would make me carrot cakes....my favorite cake! We always had a deal....she would make the cake, but I had to pull the carrots from the garden, peel and grate them. Sort of the same deal in the fall.....I'd pick and peel the apples and she would make the apple pies. I always considered those "deals" more than fair!

Aside from that, i try to soak them for at least àn hour in mildly warm water until the raisins expand. Non-raisin eaters wont notice....
Also, the last.time I made Carrot Cake, I put just a sprinkle of sweetened coconut in the batter and what a yum it was. Lastly, I use both vanilla and almond extract. Thanknyou for sharing your recipe with us. I will definitely keep and n use it as my foundation mix. Be blessed!❤

I did hear once (believe it or not it was a remark made by Queen Elizabeth II many years ago at a ceremonial cake cutting event) that the first slice is easier to remove when you cut as though you were cutting two slices and then the first slice of cake slides out. I guess she would know, she did cut alot of cakes, bless her.
