Buttery Sweet Side Dish for Thanksgiving|Honey Garlic Carrots & Parsnips
A buttery sweet side dish of Honey Garlic Carrots and Parsnips. Sautéed in butter and garlic and finished with honey make them wonderful served with roasted meat. They hold up well in colour and texture and make a great side dish for holidays and family gatherings.

Ingredients:
1 pound carrots
1 pound parsnips
3 tbsp unsalted butter
2 cloves garlic, minced
1/4 cup water
3-4 tbsp honey
1 tbsp chopped fresh parsley
to taste salt
to taste pepper
Instructions:
-Peel and trim the carrots and parsnips. Cut into 2" lengths and then slice a small amount from one side to allow the piece to sit flat. Slice a small amount off the remaining 3 sides to square up the piece (see note). Cut into 1/4" slices and then cut each slice into 1/4" batons.
-Heat the butter in a medium skillet until foamy, add garlic and sauté lightly for a minute. Add the carrots and parsnips, and stir to coat with the butter and garlic. Add the water, cover and cook over medium heat for about 4-5 minutes, stirring once or twice.
-Remove the cover and increase heat to high to evaporate any leftover water and allow the vegetables to finish cooking, about 3-4 minutes ( they will start to caramelize slightly).
-Once they are cooked to your liking remove from the heat and stir in the honey, parsley, salt and pepper. Serve immediately.
Recipe Notes:
You do not need to cut the carrots and parsnips perfectly square as that much trimming creates a lot of waste. What is important is to make sure they are similar in size for even cooking.

Was eating something similar for years.....with chili. I remember in the 1980's when Wendy's used to sell baked potatoes with various toppings.😋

If you have extra filling but don’t wish to use a bell pepper, try baking the extra in a muffin tin. I’ve actually pan fried the extra filling and topped with a fried egg. Quite tasty!

YUCK! I thought the salad looked good until I saw it had dill pickles in it. I like dill pickles but not in a creamy macaroni salad. That just sounds disgusting. Everyone's Favorite? Is like a Newfoundland thing or Portuguese thing? It must be some kind of cultural thing because this does not seem normal to me. I suppose you also put pickles in your potato salad. It's OK if you like that but it's not normal.

Hi, thanks for commenting. You haven’t missed anything, the cheese, mushrooms and onions make up most of the flavour. It’s not meant to be overpowering in any direction but rather a creamy, cheesy side dish to accompany your main dish. All the elements combine and it’s quite delicious! I’d suggest fresh thyme or sage if you’re looking for more. Hope you give it a try and let me know what you think.
