      This is brings back such good memories of my grandmother making pineapple carrot cake in the late 60's-early 70's.
      She'd push the lid down into the crushed pineapple can as she squeezed out every drop of juice into a glass, and then she'd wrestle the lid out and scrape the resulting pineapple puck out on top of the carrots I'd grated, and then she'd add a 1/2 cup each of coconut and black walnuts, which have a dizzying, almost boozy scent, and then fold that all into the batter... delicious. My sister and I also used to split [read: fight over] the leftover pineapple juice. 😂

      All cakes made with oil are very moist, therefore the pineapple is unnecessary.

    I am from South Africa and using crushed pineapple is what we have always used in carrot cake. Thank you for your recipe and for always sharing. Looks absolutely delicious

    At 78, I find myself tiring more easily after being on my feet baking. This time it was well worth it! Your instructions are so easy to understand and every one of them worked. I couldn’t believe it when I flipped the pans and the cake layers came out as I’d hoped. The frosting was the easiest I’ve ever made; didn’t take long at all. Wish I could have sent a photo. After I frosted the cake and added the walnuts, I cut it to sell as two halves at a local bake sale tomorrow. Can’t wait to try another of your cakes!

      Found out later that the two halves of this wonderful cake were sold almost immediately after the Bake Sale started. Found out who one of the women was -someone I know-and she raved and raved about it when I told her I made it. This week I’m going to make your Pistachio Cake for my son’s 52nd birthday. I know he’ll love it!

    Well you’ve done it again! Another perfect recipe- approved by my entire extended family. I made this yesterday for a celebration and it was a hit all around. The cake is not too sweet and has a lovely spiced flavor and moist texture. The frosting is tangy and sweet and perfect for this cake. This one is a keeper. Thank you!

    If you use cake strips, made from cloth and soaked in cold water, and wrap them around your cake pans your cakes will rise flat and you won't need to cut the domes off as you won't have any domes. I also like to add toasted coconut flakes to the batter as well of golden raisins with the walnuts make a great combination.

    In the US, we use pineapple all the time in this cake. I grew up only seeing it made that way. This version of a carrot cake is very close to the southern classic Hummingbird Cake. You should make it.

    I've been using a recipe for many years now that includes pineapple with the juice (small can). It's my favorite! Tip...try adding some pineapple to the icing. It's amazing! I always get compliments. I would do this for a 13×9 cake, as it might be too loose for a decorated layer cake. Thanks for your wonderful cake recipes!

      My mom also uses applesauce and it’s delicious! The best carrot cake of all time. It came from a Southern Living cookbook, but I can’t remember what year.

    Pumpkin is also good to make the cake more of a salute to the autumn harvest! As for the frosting... I am not a fan of a lot of icing sugar, so might substitute whipped cream (stabilized with the cream cheese and a fraction of the icing sugar of course!).

    LOVE carrot cake! Definitely going to make this but as I have a family history of Cancer I'm going to try it with some Just Egg and some plant based yogurt and cream cheese as I need to avoid the choline in eggs and estrogen in dairy. Thanks for sharing

    I tried you recipe yesterday and it turned out amazing Alhamdulillah and Jazakallah khairan for sharing the recipe
    Even though I had been using crushed pineapple in my cake I think what made the difference was the yogurt which gave it the moistness that had been missing in my cake …. Thank you plus the frosting is so good it piped so well I went for vintage decor and it was nice and held the shape … this will be my go to recipe from now

    Thank you so much for this one! I followed the recipe to the tee except for the pineapple as I had to use up some frozen carrots and was too lazy to go buy the tinned pineapple!
    (Only thing is I have really large baking dishes as im a new Baker and don't know the sizes and proportions 😓 i realized all my baking glassware is 9 to 10 inches so they are really large.)
    But cut to the chase the cake was super soft, moist, porous and so flavourful that we finished half the cake before it cooled.
    Only thing is the middle sunk and was a bit pasty I think I'm still not familiar with the dynamics of heat settings and timing as I use a convection oven

    Carrot cake is a family favorite, mother has used crushed pineapple in it as far back as I can remember, maybe the 1970s, it adds a nice punch of sweetness, moisture, and flavor. Another trick for more flavor is a dab of anise extract in the frosting, it adds another dimension to the carrot cake,

      @@CakesbyMK You're very welcome! It's a nice way to tie-in all the spicy flavors. I wish I remembered how much mom added but it wasn't much, just enough to give a very subtle flavor. I realize not everyone likes licorice or anise, our family all loved it.
      Mom would add chopped raisins or dates stewed in brandy and cinnamon to the cake for the holidays, it added a special extra touch.
      We all loved her mincemeat pies too.

      my mum gave this recipe over 40 years ago the only difference is ours uses chopped nut and coconut as well, it is truly a great recipe and never fails, soft moist and delicious

    Hi! Your recipe looks amazing! thanks for sharing. I have some questions to ask,
    1. Its impossible to find canned pineapples in juice here where I live! Do you think is better to use fresh one or canned one but in syrup?
    2. Do you think using smaller size pans (18cm == 7inches) would make the inside raw? How do I adjust the baking time?

    Many in Canada also use pineapple it’s very common here but I usually don’t . I will try your recipe . I made your white cake for my birthday cake it was delicious . You are a great baker it seems all your recipes come out very well .

    If you like raisins in your cake, I plump up the raisins, with the pineapple juice that I strain out. Just a minute or so in the microwave, cool and blot dry. I use about one half cup of golden raisins.

    Hi MK..thank you for the recipe...i tried this carrot cake..it tasted amazing but the cake texture was abit dense and the cream cheese also had tiny bits of butter unmixed affecting the consistency for frosting and piping...any tips to avoid this and improvise

    I just love carrot cake! And yes many times have used crushed pineapple as it makes it so moist. Now if I could just control my love of cake LOL.

    Just baked this cake. I couldn't get plain yogurt nor powdered cloves. So i substituted yogurt with sour cream, and omitted the cloves. but it tasted super tasty nevertheless.

    Hi MK, I tried out your carrot cake recipe, but because I have an egg allergy I replaced the eggs with the same amount of aquafaba…and I made mini cupcakes, the cakes were phenomenal ❤❤❤…I got 48 mini cupcakes out of the batter and two 4” cakes which I am going to make a bento cake ❤❤❤ thank you so so much ❤❤❤

      Hey! I don't see that you got a reply...Yes, this cake can be made without nuts. I've made carrot cake (not this specific recipe) with and without nuts. It should turn out great!

    Its the only way to make it here in Ontario, Canada, and if you want to make it even better i add toasted pecans, and for the best frosting add a bit of maple syrup.
