I’m no culinary expert, but if there’s anything I’ve learned from these inspections, it’s to *never* put raw and cooked meat together
It's crazy that these chefs act ignorant to this information. Even my job which involves only going into the kitchen sometimes, I still had to study food health and safety, and even I needed to learn that raw and cooked food cannot be together (I don't do the cooking). Honestly I think these chefs just don't care.
It's so bad that it feels like it is staged and faked for more views.

The biggest thing Gordon hates isn't a dirty kitchen or horrible chef's. Its putting raw next to cooked food(especially chicken)
Risking lives should be the most important issue
As someone who took food prep, that's one of the biggest things they tell you.
I learned this even when I did grocery. All that bacteria can spread and cause a massive disaster.
Rightfully so, cross contamination can lead to very very nasty situations, it’s the golden rule and really not hard to respect you just need discipline labeling your meat trays and placing them responsibly in the fridge
