Yep, I’ve worked in a restaurant dirty like that before, I remember asking the owners if could stay late for some overtime just to clean the whole god damn kitchen, but its always the same excuse, “it’s already clean enough”

I think he does it because it is so unacceptable that it must be cleaned and scrubbed instantly and that’s the point he’s trying to make. Don’t just shove it back in the fridge and deal with it later, because that’s how they got into that situation.

In these restaurants, the floors can't really get any dirtier than they already are.

Used to work at a local McDonald's many many moons ago. Maintenance and stock. First thing every morning I pulled one of the grease extractors and thoroughly cleaned it. Can't remember exactly how many there were but once all done after several days, I started again and did each one in turn. They were spotless or as clean as they could be while cleaning each one in turn each day. That on top of everything else. Cleaning fridges and rotating stock. Etc.

My mom had her baby shower for me at the old neighborhood in 99. They had a brunch buffet on Sundays, and I loved it. We went over 10x a year until they closed. I remember the owners being super nice and when you go so often for so many years you got to know them. When I heard the old neighborhood closed, I was really sad. Then I saw the kitchen nightmares episode and I was even sadder that they let their restaurant get like that.
