Most respectful Owners and Managers who does their jobs diligently would have no problem showing off the kitchen. You don't have people actually going in inspecting or getting in the staff's way. If you're refused a peek at a kitchen its usually a sign to eat somewhere else. Me, personally, I'd have camera's in my kitchen to record the staff in case someone goes full retard and tries to put a booger in someone's food or something gross and also to show my customer's our level of professionalism with a tablet so they can see how great my team would work.

I think I could tank some of those places food, but that's unsure, since they leave old food to build up bacteria (hence the sauerness where it shouldn't be) and, judging by the mess of the majority of those places, it could be contamined with anything. Pork with chicken, chicken with pork, beef with fish... You can't really predict wich strains of bacteria will be in each food on those conditions... You could have high concentrations of E.Coli and salmonella on the salad of some of those places!!!
It actually baffles me how low the food standards are in the US. I worked in a chain pub for a few months in the UK and the food might have been shit but at least it wouldn’t fucking kill anyone.

Always clean knives, work area and chopped boards between preparation of food. Red chopping board, raw meat. Brown chopping board, cooked meat. Green chopping board, vegetables and salad. Yellow chopping board, cheese and dairy. White chopping board, breads and pastries. Blue chopping board, fish and seafood.

A standard fridge with 4 shelves may like this: Top Shelf: Produce, cheese, milk/cream, third shelf: Cooked and labeled meats. Second Shelf: Raw prepared meats, skinned, boned, and or seasoned. First shelf: Boxed or sealed raw meat, temped on delivery. labeled.
