Cheese Bread by Mai Goodness | Cheesy & Milky Soft Bread Roll | Using Bread Improver or Tangzhong

  • Easy step by step procedure and tutorial in making cheese bread coated with powdered milk, cheese and confectioner's sugar. You can't stop eating this delicious treat! Turn it into a business or try it at home for your family to enjoy!
    Cheese Bread
    Roux or Bread Improver:
    1/2 cup (125g) fresh milk or evap milk
    1/2 cup (60g) bread flour or APF taken from the 500g for the dough
    Dough Ingredients :
    • 1/2 cup (125g) of fresh milk or evaporated milk
    • 2 tsp (6g) of instant active yeast
    • 1/2 cup (110g) light brown sugar
    • 1 large egg, room temperature
    • 1/2 cup (110g) vegetable oil
    • 500g (3 3/4 cups to 4 cups) Bread flour or all purpose flour
    • 1 tsp (5g) iodized salt
    Coating:
    • 3/4 cup bread flour or apf
    • 1 cup Milkboy skimmed milk powder or any powdered milk
    • 1 cup confectioner's sugar or regular white sugar
    • 1 block (165g) of grated cheese
    • 1/4 block (50g) of a butter or margarine
    • Preheat oven at 170⁰C for 15 minutes. Then bake for 20 to 25 minutes.
    • Turn the pan around halfway through the baking if using conventional oven.
    Baking Pan:
    12x16 inch baking sheet lined with parchment paper and then grease the top to avoid bread from sticking to the parchment paper
    Costing:
    Total cost of ingredients - P128
    Overhead Cost (water, elec, gas, fare etc is 40% of the cost of ingredients) - P51.20 (adjustable)
    Total Costing - P179.20
    Yields: 33 pcs for 50g each
    Net per piece: P5.43
    Profit: P5.43 x 1.7 (Mark up) = P9.22
    Selling price per piece: P8 to P10

    I made this a few days ago and super yummy! I halved the recipe and mine produced 12 medium sized breads. After a day the bread is still soft. Thank you for this T^T

    hi! update po! just made this bread kanina! finally nakuha ko n po pano makagawa ng cheesebread topings! thanks for the recipe and tips po! hnd lng po msyado umalsa ung bread ko, nag window test nmn po ako, and waited for 1 and 1/2hour what do i need to improve po kaya nxt time to ma make sure po n umalsa sya maigi? then ung bandang last po n bread ngging wet n po ung toppings hnd n po sandy nung bandang huli, dahil po baka kaya n sobrahan ako sa pag soak sa milk?

      pag di umalsa gaano yung bread pagka bake mo means hindi pa umalsa ng tama sa 2nd proofing. take into consideration na malamig panahon natin ngayon, mas mabilis umalsa pag mainit ang weather.

    hi! another question po, for tangzhong po,can i make it in advance? like sa gabi ko sya gagawin then put it s ref then morning ako mag babake?

      yes mas maganda yan. make it the night before and refrigerate it. then thaw lang bago gamitin

      dagdag ka konting butter, dapat habang minimix mo ang coating don palang ma achieve mo na ang sandy texture pag hindi dagdag lang ng skim milk or butter

      Iba po procedure, check nyo po yung ube cheese pandesal overnight proofing kong video. Nandon po procedure, amnt ng yeast na gagamitin.

      Gumagamit lang ng commercial bread improver kung maramihan gawa mo at pambenta pero kung pang personal consumption lang gayahin mo na lang ginawa kong roux sa video.

    Miss mai bakit hind na po nakadirect na iluto sa pan yung roux? Tulad po ng ibang roux na ginawa po ninyo.
    Pwede po ba ganyan din sa ibang recipe ng bread?

      Easier version ito ng paggawa ng roux. Puede initin mo lang ang milk, pero dapat maiinit na mainit bago ilagay ang flour. Puede sa lahat ng bread. So pili ka ng mas applicable sayo either sa kalan iluto or microwave mo yung milk

    Hi Ms. Mai gumawa po ako ng cheesebread with roux,after half day sobrang tigas na po ng bread ko.im using hand mixer po turns out sticky,minasa ko ulit ng kamay napakinis ko naman.kaso lagi po ganun ang kinakalabasan after halfday tigas na po ng bread ko?San po kya kulang at sobra?thanks

      Yung ginamit mo sa roux na flour galing sa 4 cups yun, ganon ba ginawa mo?
      May weighing scale ka bang ginagamit?
      Yung yeast mo ok ba, umalsa ba ang mga tinapay?

      Opo nag weighing scale at un roux dun din po galing,may effect po kya un turned out ng roux ko ay hindi sticky?natuwa pa nga ako at malambot un mixture,kaso nun naluto gang mainit lang malambot😔

      Anong gamit mong flour Sis? Nagdadagdag ka ba ng flour pag sticky? Kasi pag yung dinagdag mo hindi namasa mabuti sa dough puede g maging matigas bread.
      Puede rin na kulang sa knead, try mong mag autolyse method. After mixing the ingredients, ipa rest mo ng 30 mins at takpan mo lang then saka mo masahin para ma build na gluten at maging strechy na ang dough. Knead for 15 mins.

      Mag weigh ka sis ng ingredients, hindi pare pareho ang cups measurements, minsan sobra depende pa paano mo nilagay ang flour sa measuring cups. pag matigas ang dough habang nagmamasa ka, add up to 1/4 cup of milk. Para makuha mo ang tamang consistency, pag naman sobrang lambot at add flour.
