Ube Cheese Pandesal Overnight Proofing by Mai Goodness | Using Home Made Bread Improver | Bread Roll

  • Easy step by step procedure and tutorial in making Ube Cheese Pandesal using bread improver or tanzhoung and proofing it overnight so you can have freshly bake bread in the morningit. It's a delicious bread roll with purple yam and cheese filling and purple yam (ube) powder coating. Turn it into a business or try it at home for your family to enjoy!
    Ube Cheese Pandesal
    Roux or Bread Improver:
    • 1/2 cup (125g) fresh milk or evap milk
    • 1/2 cup (60g) bread flour or APF taken from the 500g of flour for the dough
    Dough Ingredients :
    • 1/2 cup (125g) of milk or evaporated milk
    • 1/2 tsp (1g) of instant active yeast or you may use 1/8 tsp of instant active yeast if it's summer & may take 6 to 12 hrs of proofing depending on the surrounding temperature .
    • 1/2 cup (110g) light brown sugar
    • 1 large egg, room temperature
    • 1/2 cup (110g) vegetable oil or canola oil
    • 500g (3 3/4 cups to 4 cups) Bread flour or all purpose flour
    • 1 tsp (5g) iodized salt
    • 1 tbsp vanilla flavoring or 1 tsp vanilla extract
    • 2 tsps ube flavoring
    Filling:
    • 1 225g quickmelt cheese or regular cheese
    • Ube haleya
    Coating:
    1/2 cup ube powder or fine bread crumbs
    • First proofing or rest for 1 hour.
    • 2nd proofing for 6 to 8 hrs.
    • Preheat oven at 180⁰C for 15 minutes. Then bake for 15 to 18 minutes or until golden brown.
    • Turn the pan around halfway through the baking if using conventional oven.
    Note:
    *If you want to bake it immediately, Increase the yeast measurement to 2 tsps or 6g. Then 1st proofing should be 1 1/2 hrs and 2nd proofing 1 hour then bake at the same temperature and time.
    *1/2 tsp of instant yeast may take 6 to 8 hrs of 2nd proofing
    *1/4 tsp of instant yeast may take 8 to 10 hrs of 2nd proofing.
    *1/8 tsp of yeast may take 10 to 12 hrs of 2nd proofing depending on the surounding temperature.
    Yields: 20 pcs of 50g each
    Costing:
    Total cost of ingredients - P160
    Overhead Cost (water, elec, gas, fare etc is 40% of the cost of ingredients) - P64 (adjustable)
    Total Costing - P224
    Per piece costing for 50g - P11.20 x 1.70 (tubo) = P19.04

    Hi! Mai, ang ganda. Pwede palang 2nd proof na ilagay lang sa counter RT yong iba inilalagay sa fridge kaya nagtataka ako so I did not tried that procedure. For the ube powder ang mayroon sa akin ay magaspang maybe I can just make it in the food processor to make it finer.       Usually ilalagay nila sa fridge kasi hindi binawasan ang yeast tapos paglabas non, mag wait ka pang umalsa yun. Hindi nagagamit yung time para mas sumarap ang bread, kailangan pa malaki ref mo para magkasya ang mga baking sheet and not really practical if you think about it.

      Hindi ako nagamit ng wax paper kasi yung wax nyan pag na expose sa high heat ay toxic because of the wax. Puede lang yan gamitin kung hindi maiinitan. Parchment paper dapat or baking paper.

      Madaling tumigas ang bread pag butter ang ginamit mo. But if you want to use butter, make sure na pure butter and not margarine ang nakalagay sa label nya. Same measurements din ng oil.

      Iba ang measurement ng yeast nito and I use ube powder as coating not bread crumbs. Matagal ang pagpapa alsa nito.

      Puedeng merong roux, puedeng wala kung personal consumption lang. Total of 250g ang fresh milk na gagamitin sa recipe. 4 to 5 days room temperature pero puedeng tumagal for weeks pag ni ref at initin lang pag kakainin na.

      Pag 2kls, gamit ka ng commercial bread improver para mas maganda ang form ng bread mo, suggestion ko sya. Make sure din na gumagamit ka ng weighing scale to double the ingredients. Yung unang na form, ang unang ibe bake mo. Parang first in, first out to bake.

      Kasi nasa roux yung 125g na milk pa. Since hindi ka gagawa ng roux, gagawin mong 250g ang milk at 500g pa rin ang flour.

    I made this today, di po siya masyado umalsa. I used 1/4 tsp yeast and then 2nd proof for 9hrs. I don't know if di kasi masyado mainit or namatay yeast

      Pinatagal mo pa dapat, minsan dahil malamig sa gabi. You can extend up to 12 hrs if hindi umalsa. Tinest mo ba yeast mo.kung ok pa?

      Pag hindi umalsa puede ka mag start baking in a cold oven. Bukas mo oven then isalang mo without preheating at ma force yun umalsa, just keep an eye pag luto na.

      For 750g of bread flour- Commercial bread improver should be 3g and yeast is 1/2 tsp plus 1/4 tsp. Weigh your ingredients or it will not be accurate.

    paano po kung may egg ang bread okay lang po tlga overnight proofing sa room temp lang?ok lang wala sa fridge?hindi siya masisira? salamat..🙂

      Yes ok lang po. Ganyan po sa mga bakery magpa alsa ng tinapay. Sa hapon ginagawa at madaling araw ang bake

      Not anymore kasi warm naman ang roux. Basta instant yeast gamit mo.

      Hindi nagkukulay ang ube powder sis, na try ko na. Best pa rin talaga ang ube flavoring na liquid. Pang coating lang yan maa ok.
