    I'm going to try this but replace the extra beef with beef stock instead, since it's only added for the extra beef flavor

    When you chill the meat before you slice it, don't actually freeze it all the way. Put it in the freezer until it's harder and very cold, but not frozen. Chilling it does make thin slicing much easier, but if it freezes, ice crystals will penetrate the meat cells and make it dry (yucky) when you cook it.

    A good tip to make sure your beef is not tough is to cut against the grain (across the fibres of the meat). When you slice it as thin as in this recipe, it'll almost fall apart, it's so tender. ~

    This reminds me of Korean Bulgogi. I don't think I've ever seen anyone use red and white wine with Sake before. Not to mention apple juice. Very creative, runny! I will try this recipe. It looks so good. My mouth is watering right now. Dai is quite funny,too. ;-) By the way to tenderize the beef, marinade the beef in lemon/lime flavored soda.

    @vancityguy Thinly sliced ribeye is ideal for this use. You want the beef to have a high fat content, but it is not necessary to buy expensive quality meat. Many Japanese grocery sell sliced meat exactly meant for this purpose.

    I'm gonna make this for dinner tomorrow. I wasn't able to find that super thinly sliced beef at the regular grocery store here, so I got some skirt steak instead and sliced it as thin as I could. Hopefully it will turn out good.
    Also, if you check in the related vids of another gyudon recipe, someone claims that Yoshinoya uses/used MSG in their beef, which, if true, could explain why the meat is so nice and tender

  • @saifulizhan

    I'm so happy you used 'garnish!' i squeeled when you said it. I think the reason you may have said 'gamish' was because letter r + letter n ( rn ) looks very similar to just the letter m. I noticed when I told you what garnish was you responded with Garmish (with an m). i assumed it was just a mistake so i didn't correct you! oops!
    this looks yummy! I dont think i could ever slice beef that thin, though. I wouldn't even know what part of beef to us!

    @ChineseSe7en You simmer the first (smaller) amount of beef to extract it's flavors into the liquids & make a broth, very much the way one would simmer bones to make a stock. This takes a while, but you don't use this beef in the finished Gyudon. You discard it, or use it for something else, like fried rice. The second (larger) portion of beef is meant for eating, & you only cook this for five minutes because you want it to be tender. Over cooking it can make it too tough for Gyudon.

    If you want to recreate the tenderness, don't let the pot come to a boil like it did. Cook the meat at a super super low heat. Maybe even in the oven. This will be similar to a braise & *should* give you meat that's more tender.

    @PointlessVidsInc Go to an asian market, or ask a butcher to slice some beef on the meat slicer. The same slicer they use for deli meats & salami, pastrami, etc. What kind of beef? Whatever you want. Round is good, but ribeye is my favorite.

  • @flmcd
    @flmcd 13 ปีที่แล้ว

    buy .. frozen meat slicer .. and you can slice the beef like a shbu shbu or more thiner
