    AVOCADO PESTO
    Serves: 2
    2 cups basil leaves
    1 tablespoon pine nuts
    1 garlic clove
    1/4 cup olive oil
    1/3 cup water
    1 teaspoon lemon zest
    1/2 teaspoon salt
    1/2 avocado
    Blend everything in a food processor. Add your favorite keto noodles and protein.
    MACROS: Calories 465 Fat 33.6g Protein 18.5g Total Carbs 10.1g Net Carbs 4.1g
    MEXICAN COLESLAW
    Serves: 6
    ¼ cup avocado oil
    ½ whole jalapeno, sliced
    1 garlic, minced
    1 tablespoon lime zest
    2-3 tablespoons lime juice
    ½ teaspoon ground cumin
    ½ teaspoon salt
    1 (14 oz) bag coleslaw mix or 1 head cabbage, sliced
    ¼ red onion, thinly sliced
    1 cup chopped cilantro
    1️⃣ Add avocado oil, jalapeno slices, garlic, lime zest & juice, ground cumin and salt to a small bowl. Stir and let sit for 30 minutes or overnight to allow time for flavor from jalapeno to infuse into the oil.
    2️⃣ Before serving, remove jalapenos from the coleslaw dressing. Toss dressing with coleslaw, onion and cilantro in a large bowl.
    MACROS: Calories 107 Fat 9.4g Protein 0.9g Total Carbs 5.1g Net Carbs 3.4g
    KETO MOLE
    Serves: 4
    2 tablespoons avocado oil
    3 cloves garlic, minced
    1 tablespoon chili powder
    1/2 teaspoon ground cumin
    1/2 teaspoon ground cinnamon
    1/2 cup tomato sauce
    1/2 cup chicken broth
    1/4 cup sugar free chocolate chips
    2 tablespoons adobo sauce, optional
    1 tablespoon almond butter
    1/2 teaspoon salt
    1️⃣ Heat avocado oil in a large skillet over medium heat. Add garlic, chili powder, cumin, and cinnamon. Cook while stirring for 30 seconds to bloom the spices and develop their flavor.
    2️⃣ Add remaining ingredients. Stir to combine. Reduce heat to medium-low and cook for additional 3 minutes.
    MACROS: Calories 143 Fat 12g Protein 2g Total Carbs 9g Net Carbs 3g
    KETO ALFREDO SAUCE
    2 tablespoons butter
    2 cloves garlic, minced
    Pinch nutmeg
    1 egg yolk
    1 ½ cups heavy whipping cream
    1 cup grated parmesan cheese
    1️⃣ Melt butter in a skillet over medium high heat. Stir in garlic and nutmeg and let cook until fragrant.
    2️⃣ Whisk egg yolk into heavy whipping cream. Pour into garlic butter mixture and reduce heat to medium low. Continue stirring and cooking until the sauce has thickened enough to coat the back of a spoon (about 5-10 minutes). Do not let it boil.
    3️⃣ Once thickened, stir in noodles and parmesan cheese. Season with salt and pepper.

    Love your sauces! This is one of my survival mode techniques, too. I keep a sauce or two already made up in the fridge and use them in a couple of different dishes. I also sauté a batch of mushroom in butter and carmelize a batch of onions and keep them in the fridge. They’re easy to add in with basic proteins with or without a sauce. They’re great in omelets, on a burger or steak or even a pork chop. They add into sauces to give a little variation there, too. Or the onions can be cut up and mixed into sour cream along with onion powder, powdered or granulated beef bouillon and a dash of coconut aminos or Worcestershire sauce to make a quick French onion style dip for pork rinds or veggies. I think big until it actually comes time to fix dinner, then I just don’t feel like being bothered with it. Sauces and little extras already prepared make it easy.

    OOH! Love the mole recipe! I adore mole, and it wouldn't be mole without the chocolate. Making meals with sauces helps to get the fat in. No need for fat bombs.

      @@KetoFocus I'm going to have to look for that! My parents used to get me to eat broccoli by telling me it was like the 'Green Food' trees Little Foot and his friends would eat in The Land Before Time. I'm 38 now and still think of that every time I have broccoli. These look even more like trees and make me want to eat them even more!

    well.. egg and olive oil makes mayonaise..why not used homemade mayo and chipotle for the mexican slaw??

    What does the chocolate do for the Mole Sauce?

      Mole is traditionally made with cacao or cocoa. It's a Mexican dish and you can't have authentic mole without it! You don't have to use chocolate (which I assume here is slightly already sweetened). You can just use cocoa but I would add a little butter because the chocolate with the coca buter inside gives a better body to the sauce. You can also use bakers bittersweet chocolate and sweeten season as needed.

    So.. It's not technically 5 minutes as the title suggests. It's at least an hour of prep plus 5 minutes, 65 min total. I'm on a 'low meal prep time' diet and these are 13 times my 5 min per meal limit.. 😢 😭
