Sheet Pan Honey-Glazed Salmon and Carrots | One Pan Meal!

    Ingredients:
    1 lb carrots
    2-3 salmon filets or one large
    1 Tbs olive oil
    Salt and pepper, to taste
    3 Tbs to 1/4 cup honey
    Chili flakes
    2 Tbs soy sauce
    1-2 cloves minced garlic
    Directions:
    Preheat oven to 400F
    Peel carrots and slice in half lengthwise. Lay onto a lined baking sheet and drizzle with olive oil, 1 Tbsp honey (it helps to heat it so it is thinner), and season with salt and pepper. Toss to coat and roast for 15 min.
    While carrots cook prepare the salmon and glaze. In a microwave safe bowl mix remaining honey, soy sauce, chili flakes and garlic. Microwave at 30 second intervals for 2-3 min, stirring in-between, until the mixture has begun to thicken. Let it cool while carrots finish baking.
    Remove the carrots from the oven and make a space on the pan for the salmon. Lay the salmon filets on the pan and cover with your glaze. Bake for an additional 15 min or until salmon is done.
