Ingredients
150g pork meat, cut into slices
300g lotus root, peeled and sliced
50g dried peanuts
25g dried anchovies
4 dried red dates
1 dried Shiitake Mushroom
8-10 dried longans
1-2 tablespoons wolfberries (goji berries)
2 Bowls of water
1/2 TBSP Sesame Oil
1 TBSP Light Soy Sauce
1/2 TBSP Fish Sauce
Pinch White Pepper
Salt to taste
Instructions
1.) Prepare the Ingredients:
- Soak the dried peanuts in water for at least 2 hours, then drain.
- Slice the pork meat.
- Remove any tiny bones of dried anchovies and rinse to remove excess salt.
- Rinse the mushroom, red dates and dried longans.
2.) In a dry pan, roast the dried peanuts over low heat. Keep swirling the pot to ensure even roasting and prevent burning. Roast until the peanuts are lightly browned and fragrant.
3.) Make the Soup: Pour in 2 bowls of water. Add the dried anchovies, 1 dried Shiitake Mushroom, lotus root slices and red dates. Bring to a boil over medium heat.Season pork meat with some light soy sauce.
4.) Simmer and Season: Once the soup comes to a boil, reduce the heat to low. Season with sesame oil, light soy sauce, fish sauce, salt and white pepper. Add dried longan, pork slices and goji berries. Let it simmer gently for 30 min to 1 hour with low heat. Skim off any foam or impurities that rise to the surface during cooking if any.
5.) Serve: Ladle the soup into bowls and serve hot.
