Oh my god! It's my first time seeing a non-Indian person using unripe jackfruits for a dish!!!! I can't wait to try it out!!! I'm from India and my family uses unripe jackfruits for making sambhar and even gravies. Never seen anyone else use it... My grandma also uses jackfruits to make papads or these crispy fritters you fry in oil.. and they're so yummy

I made the sweet potato chili yesterday and wow oh wow is that good! Such a fresh twist on normal heavy chili. I didn't have canned lentils but added dry lentils and extra water and they cooked up perfectly.

I've been experimenting with noodles for quick weeknight meals. I love the peanut butter - gochujang- soy sauce combination and your recipe sounds like a great way to jazz that up! I would not have thought of coconut milk in this recipe. Or jackfruit. Will try!
Also if you could make a video about nutrition for students living in dorms and their limited cooking time and facilities, it would be helpful. as I am a student who totally survives on cafeteria meals but other than that I always prefer eating home-cooked meals, unfortunately for which I dont have enough time. .. I have always loved your nutrition advises so if you could make one based on student it would be helpful

I tried the vegan chilli and it was so good. Literally just finished eating it. I added a little more seasoning for my taste though; salt, garlic powder, a little more chilli and a bit of curry powder.

substitute for jackfruit: oyster mushrooms. You can pull them apart into lil strips and cook them in a bit of pil until brown, the texture is awesome
